Salt Pork in Britain?!


Question: I have some recipes that have this as an ingredient, Boston baked beans etc. Can I get this in the UK?

You should, but if not a piece of streaky bacon in a slab, buy it at a shop that sells it by the pound/kilo and is sliced to order, just get them to cut a piece 1-2 inches thick, split that, and when you make the beans, slightly brown it for flavour tuck it in the bean mix and slow cook it in a crockpot or slow oven, at temp of 300 d F or 120 d C Gas mark 2 for 3-5 hours, crockpot for 5-8 hours on low, but bring them to the simmer first.

Former chef, from Canada, have made them a few times in my 20+ yrs as achef,a dn worked in Quebec the home of Feves du Lard.

Yes, I have seen a lot of Salt Pork in proper delicatessen shops. I might be able to help more if I know which area you are in. I live in yorkshire, there are plenty of places around here.
