Does anyone have a recipe for Bone marrow? Perhaps braising the bone itself? Thanks!?!


Question: I saw a picture in a magazine, and it had large bones sliced so that its stood on its own, with the delicious marrow still inside. Unfortunately it had no recipe following the picture. Any recipe would be greatly appreciated!

The most well-known bone marrow recipe I know of is the Italian dish "ossobuco".
I'll see if I can find a good recipe in English. I used to make in in my pressure cooker to cut down on cooking time.
On second thought, maybe you could just google "ossobuco" and "recipe" and choose whatever one you want to try:

Bone marrow is also one of the basic ingredients of authentic "Risotto alla Milanese", the yellow risotto with saffron.

Wow I have never heard of this in a meal before. I only heard about it in while dealing with a person needing a transplant of some sort.

I know what you are talking about... the bone marrow sauce. Heres a delicious recipe for the
Bone Marrow sauce:
2 shallots, finely diced
1 cup red wine
1/2 cup ruby port
4 cups chicken stock
1 teaspoon beef bone marrow, diced
Salt and freshly ground pepper

Place the saute pan with the chicken drippings on the stove and heat until almost smoking. Add the shallots and cook until lightly golden brown. Add the red wine and port and cook until reduced by 3/4. Add the chicken stock and reduce by half. Whisk in the bone marrow and season with salt and pepper, to taste
