Easy breakfast casserole recipe?!


Question: I'm looking for something simple and not too rich in calories. Just eggs and turkey sausage, low fat cheese.. anybody have any recipes like that?

Here ya go:

8 eggs, beaten
1/2 pound turkey sausage, crumbled and cooked
1-2 tablespoons Mrs. Dash (any kind...or use dried italian seasoning)
salt, pepper, garlic powder to taste
1 cup shredded cheese

Spread the crumbled sausage in the bottom of a baking dish (8x8 or a round pie plate works well). Combine the eggs, cheese, and the seasonings and pour over the sausage. Bake at 350 for 30 minutes or so. Top with extra cheese, if desired, and put under the broiler for a few minutes. Easy and yummy!

You can add thawed hash brown potatoes to the dish if you like (the shredded kind works best). Just heat them through and layer on the bottom with the sausage.

Not exactly a casserole however a recipe.

You cook the turkey sausage in a skillet till browned and then chop up in pieces. Take a few eggs, mix well, and add the chopped up sausage, diced onion & green pepper. Then, cook the egg, when finished sprinkle low-fat cheese on top and serve on toasted bread or bagel. Taste delicious.

layer thin sliced potato, ham (or any meat desired--cooked) and sweet potato (for vitamins and taste) then beat eggs and milk then pour over....then sprinkle cheese (your choice) and on the side mix italian bread crumbs (half cup)and 2 tablespoon of butter and sprinkle on top for crust.....
-you can controll the portions....

15 to 20 min.

Why? Breakfast casseroles suck? Part is undercooked, part is overcooked...everything tastes like the strongest ingrediate (usually sausage)

Make a fritata instead.

Easy El Rancho Monterey Jack Sausage Egg Casserole Recipe


3 small cans diced green chiles
1-1/2 pounds grated Monterey Jack cheese
1 lb sausage (browned) , your choice
12 large eggs
1 large can evaporated milk*
Paprika
Flour
A little salt, black pepper, depending on the sausage used
*NOTE: This makes the dish so very creamy.

Directions
Butter 9x13 glass casserole dish, sprinkle with flour.
Layer green chiles, sprinkle small amount of flour, paprika and salt. Top with *browned* sausage,
Sprinkle Monterey Jack grated cheese on top evenly
In large bowl, whisk eggs and milk together,
Pour *carefully* over the layered chilies, sausage, cheese
Sprinkle with paprika
Bake at 325 degrees.30 to 45 minutes
SO EASY and DELICIOUS
