Answers: Is it okay to make the cakes now and bake them tonight or will the mixture go funny??

You'd better bake your cakes as soon as you mix them. Then you could freeze the cakes. No harm done.
* Baked Chocolate Fudge Pudding
Ingredients
3 Tablespoons shortening or margarine
3/4 cup sugar
1 cup flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 cup chopped nuts
1 cup brown sugar
1/4 cup cocoa
1/4 teaspoon salt
1-1/2 cups boiling water
Cream together shortening/margarine and sugar. Sift together flour, baking powder, and salt. Add dry ingredients to creamed mixture alternately with 1/2 cup of milk. Fold in 1/2 cup chopped nuts. Put batter into ungreased 9-inch baking pan.
Mix together brown sugar, cocoa, and salt. Sprinkle over top of batter. Do not stir. Pour 1-1/2 cups boiling water over all. Bake at 350 for 40 to 45 minutes. Serve with whipped cream or ice cream. Best served warm.
*Chocolate Fudge Pudding Cake
INGREDIENTS:
1 1/4 cups cake flour, sift before measuring
3/4 cup granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 ounce unsweetened chocolate
2 tablespoons butter
2 tablespoons vinegar
6 tablespoons milk
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts
1 cup light brown sugar, firmly packed
1 1/2 cups boiling water
2 ounces unsweetened chocolate
PREPARATION:
Into a mixing bowl, sift together the cake flour, granulated sugar, soda, and salt. In a saucepan over low heat, heat chocolate and butter until melted.
Combine milk and vinegar in a cup or small bowl; stir into the chocolate mixture with the vanilla extract.
Add chocolate mixture to dry mixture all at once, stirring just until blended. Add chopped pecans.
Spoon into a greased and floured 8-inch round cake pan. Sprinkle brown sugar over the batter.
Combine 2 ounces unsweetened chocolate with the 1 1/2 cups boiling water; stir into blended and chocolate is melted. Pour over the batter. Bake at 350° for 45 to 50 minutes. Serve fudge pudding cake warm with ice cream or whipped topping.
(Serve this rich fudge snack cake warm, with a big dollop of whipped cream or vanilla ice cream.)
