When making a leche flan, it should be 1:1?!


Question: like for example, 3 big cans of evaporated milk and it should also be 3 big cans of condensed milk? my problem is i tried making it yesterday, it was a mistake..i mixed 1 big can and 1 small can of evaporated with 2 big cans of condensed milk and 2 small condensed milk with 13 egg yolks..i cook it in the steamer for almost 3 hours..when its done, it comes out messy..what shud i do? i still have the remaining mixture here, should i add 1 big can of evap and 1 small of evap to make it 3 big cans of evap, same with the condensed, to make the finish product perfect? pls help..tnx

i loove leche flans! and this is how I make mine, try this,:D

2 cans condensed milk.
7 eggs(you can remove the egg whites if you like but i really don't see why you should. I use whole eggs in mine)
sugar.
about 5-6 llaneras.

melt the sugar in your llaneras
mix the condensed milk and eggs very well. strain it if there are yolk particles on the surface. place on your lanneras and cover with foil.

heat the water in your steamer until boiling, once boiling, place it in very low heat, and place your llaneras in it. cook for about 20 minutes or less.

I assure you, this is very good. It's not jelly like, but instead it creates a soft, creme brulee like textured flan. it won't be too sweet though it seems like it would be.

If you still want to use your left over, i think you should add 1 more can of condensed milk and just add about 4 packs of melted gelatin.
