Potato salad, coleslaw?!

Par boil the potatoes in boiling, salted water until just tender. Drain and leave to cool to a handling temperature.
Cut up into small dice.
Add a teaspoon of mayonaisse to a teaspoon of yoghurt or creme fraiche, salt, black grounded pepper and chop up some gherkins and cut some chives, preferably fresh and then mix the whole. Leave to cool and flavours will develop.

Coleslaw:-

Finely shred white cabbage, but not the centre, that is too bitter.
Grate carrots.
Finely diced onion - preferably white ones, they are not so strong, and are sweeter.
Now this is important. To make it taste exactly like shop bought you will need 2 parts mayonaisse, to 1 part salad creme. Mix that and grind a few caraway seeds to taste, add salt and pepper and there you have it.

This is the basic recipe. You could of course add raisins, apples, nuts etc as per your choice.

We used to make this daily in our vegetarian restaurant and we could never seem to do enough.

Potato salad:

stick new potatoes into steamer for 20 mins

Meanwhile chop up an onion and mix some mayo with a little white wine vinegar (just keep beating it until it goes past the lookiing curdled stage) add spuds while still warm (easier to mix in) and stir in chopped onion and chopped bits from a head of celery - yummy.

Coleslaw - grate carrots, white cabbage, onion, and whatever else you like and add to same mayo/white wine vinegar mix.

POTATO SALAD
INGREDIENTS
2270 g red potatoes, diced
4 eggs
4 stalks celery, chopped
1 green bell pepper, chopped
454 g sweet pickles, cubed
10 ml prepared mustard
180 ml mayonnaise
1 onion, finely chopped
4 g white sugar
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
Place eggs in a medium saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and peel under cold, running water. Chop, and set aside.
Stir the eggs, celery, green bell pepper, sweet pickle cubes, prepared mustard, mayonnaise, onion and white sugar into the potatoes. Season to taste with salt and pepper. Cover, and chill in the refrigerator for at least 3 hours before serving.

COLESLAW
INGREDIENTS
15 ml red wine vinegar
4 g white sugar
80 ml mayonnaise
15 ml coarse-grain brown mustard
1 head cabbage, cored and shredded
2 hard-cooked eggs, peeled and chopped
6 slices crisply cooked bacon, crumbled
salt and pepper to taste
DIRECTIONS
In a large bowl, stir together the vinegar, sugar, mayonnaise and mustard. Add the cabbage, eggs and bacon, and toss lightly to coat with the dressing. Season with salt and pepper. Refrigerate for 1 hour before serving to blend flavors.

Apple and cheese cubes in the coleslaw is a wow factor.
Chives in the potato salad.

Coleslaw-cabbage with shredded carrots. Mix together in seperate bowl salad dressing or mayonaise(2 cups)
vinegar(just a quick drop)
sugar(about 1/2 cup)
mix and stir in cabbage
Potato salad-cut potatoes and pan fry
place in large bowl and add salt pepper and Cavender's (if desired)
mix with two parts mayonaise one part mustard. It's killer!

coleslaw,

cut cabbage fine,
grated carrot,slice red onion fine,add some raisins,as well some greated cheese, also red or green peppers,mushrooms..(.raw )mix together...

finish it of with vinaigrette dressing....

potato salad,
cook potatos , let cool. then cut into bits, then add some spring onion, then potatoe salad dressing...

Red Potato Salad
12 cups cubed red potatoes
1 cup chopped green bell pepper (about 1 medium)
1/2 cup minced red onion
1/2 cup extra-virgin olive oil
1/3 cup red wine vinegar
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper

Cook potatoes, covered in boiling water, 10 minutes, or until tender; drain well and cool.

In a large bowl, combine potatoes, bell pepper and onion.

In a small bowl, whisk together remaining ingredients. Pour over potato mixture, tossing gently to coat. Cover and refrigerate.

Creamy Cole Slaw
1 head green cabbage, finely shredded
2 large carrots, finely shredded
3/4 cup best-quality mayonnaise
2 tablespoons sour cream
2 tablespoons grated Spanish onion
2 tablespoons sugar, or to taste
2 tablespoons white vinegar
1 tablespoon dry mustard
2 teaspoons celery salt
Salt and freshly ground pepper

Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

Add bacon to the potato salad, it's yum.

Potato salad

7 Medium Potatoes peeled and washed.
1 Medium onion
1 boiled egg
200 Gram frozen or canned peas
Mayonnaise
Fresh or dried parsley

Method
Boil potatoes until almost soft in salted water
grate onion fine and add to drained potatoes
add cooked frozen peas or 1 can of tinned peas
add mayonnaise and stir through carefully.
Grate hard boiled egg and sprinkle on top for garnish
Top with a sprinkle of parsley.

Coleslaw

1 head of cabbage
2 raw fresh carrots
1 medium onion
3 medium gherkins
Mayonnaise or salad cream

Method
Cut cabbage fine taking care to not cut the veins or core.
The thinner you can cut it the better
Grate the carrots and onion and gherkins together
Add gratings to the cabbage
Mix all with mayonnaise

you get some cocktail sticks and cut into cubes some pineapple with hard cheddar cheese some can have ham and cucumber, sweetcorn with tuna mixed up with mayonaise
soft cheese mixed with chives as a dip with dorito crisps salmon sandwiches cut into triangle shapes make apple punch which is apple juice with lemonade shortcake with strawberries in a small glass dish

boil potatoes as usual say for 20 mins. Take out of saucepan. Put in bowl and chop into cubes. Mix in about half to a jar of mayonnaise. Mix well. Don't make it too creamy with the mayonnaise. You can add cheese to it to make it nice as well. Some add chives but I don't. If you want to do it easier. There are potatoes you can get from the supermarket which are pre-boiled. You just put them in the microwave for 8 mins. Then follow other steps. Enjoy
