3 tablespoons plum preserves
1 green onion, thinly sliced
1 tablespoon soy sauce
2 teaspoons lemon juice
1/8 teaspoon curry powder
1 dash cinnamon
1 dash red peppers
4 center-cut pork chops(3/4 inch thick)
1 garlic clove, split

Preheat oven to 350*.
In small saucepan, heat and stir plum preserves, green onion, soy sauce, lemon juice, curry powder, cinnamon and red pepper over medium heat until bubbly; set aside.
Trim fat from pork chops.
Rub both sides of chops with garlic.
Place chops in baking dish.
Baste with sauce.
Bake 20 to 25 minutes or until juices run clear, basting often.

Pork Chops with Pear and Ginger Sauce


1. 4 (4 ounce) boneless pork chops, 1/2 inch thick, trimmed
2. Salt and freshly ground pepper to taste
3. 2 teaspoons canola oil
4. 3 tablespoons cider vinegar
5. 2 tablespoons sugar
6. 2/3 cup dry white wine
7. 1 cup reduced-sodium chicken broth
8. 1 firm, ripe pear, such as Bosc or Anjou, peeled, cored and cut lengthwise into eighths

10. 6 scallions, trimmed and sliced into 1/2-inch lengths

1. Season pork with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add pork and cook until browned and just cooked through, 2 to 3 minutes per side. Transfer to a plate and keep warm. Pour off fat from the pan.
2. Add vinegar and sugar to the pan; stir to dissolve the sugar. Cook over medium-high heat until the syrup turns dark amber, 10 to 20 seconds. Pour in wine (stand back, as the caramel may sputter) and bring to a simmer, stirring. Add broth, pears and ginger; bring to a simmer. Cook, uncovered, turning the pears occasionally, for 5 minutes. Add scallions and cook until the pears are tender, about 2 minutes more. Add the cornstarch mixture and cook, stirring, until lightly thickened. Reduce heat to low and return the pork and any accumulated juices to the pan; turn to coat with the sauce. Serve immediately.

Pork and Pineapple Chops
Marinated the pork chops in the liquid of a can of pineapple rings.
Place several pineapple ring in the bottom of a roasting pan add more on top and the juice.
Roast at 180C in a pre heated oven for 35- 45 minutes, depending on how you like them.

DIRECTIONS

Rinse pork chops, pat dry, and season with garlic powder and seasoning salt to taste. Place the beaten eggs in a small bowl. Dredge the pork chops lightly in flour, dip in the egg, and coat liberally with bread crumbs.
Heat the oil in a medium skillet over medium-high heat. Fry the pork chops 5 minutes per side, or until the breading appears well browned. Transfer the chops to a 9x13 inch baking dish, and cover with foil.
Bake in the preheated oven for 1 hour. While baking, combine the cream of mushroom soup, milk and white wine in a medium bowl. After the pork chops have baked for an hour, cover them with the soup mixture. Replace foil, and bake for another 30 minutes.

Baked Pork Chops Recipe

This is a super easy pork chop recipe that tastes like you slaved over a hot stove for a few hours to achieve its tender flavor.


1 cup Ritz crackers
3 tablespoons parmesan cheese
1/2 teaspoon salt

Yields: 3 servings

INGREDIENTS:
4 pork chops
salt and pepper to taste
1/4 cup all-purpose flour
1 cup sour cream
1/4 cup dry sherry 1/4 cup ketchup
1 teaspoon Worcestershire

DIRECTIONS:
1. Season pork chops with salt and pepper to taste. Dredge seasoned chops in flour. Heat oil in a large skillet and brown seasoned chops in oil (covering skillet with lid if desired). Pour off fat.

Pork, Squash and Apple Dinner:

1/2 cup packed brown sugar
2 tablespoons firm margarine or butter, cut up
1 teaspoon ground cinnamon
1 small acorn squash
1 large unpeeled red cooking apple
3/4 cup Bisquick Heart Smart? mix
1 teaspoon seasoned salt
1/4 teaspoon pepper
9 saltine crackers, crushed
1 egg
2 tablespoons water
6 boneless pork loin chops, 1/2 inch thick (1 1/2 lb)


1. Heat oven to 350°F. In small bowl, mix brown sugar, margarine and cinnamon until crumbly; set aside. Slice squash into 1/2-inch rings. Cut rings in half; remove seeds. Cut apple into chunks.
2. In shallow dish, stir together Bisquick? mix, seasoned salt, pepper and cracker crumbs. In another shallow dish, mix egg and water. Dip pork into egg mixture, then coat with Bisquick mixture.
3. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 6 to 8 minutes, turning once, until coating is brown.
4. Place pork in ungreased 13x9-inch (3-quart) glass baking dish. Arrange squash and apples around pork. Sprinkle with brown sugar mixture. Bake uncovered 40 to 45 minutes or until squash is tender and pork is no longer pink in center.

I lightly bread the pork chops -- thin cut, no bone, but with some fat grain. Not too lean as it might get tougher or dry while cooking. I add paprika and pepper and then bake at 350 degrees for 40 minutes. Then I make the sauce -- use apricot preserves (1/2 cup for 2 pork chops, 6 tablespoons of soy sauce, teaspoon of dijon mustard and a dash of powdered ginger if you like.
Heat in a sauce pan, stir well and then pour over the pork chops when serving.
