Only substitute half of the regular flour for wheat ... otherwise, it will be too heavy. If you go to a health food store, alot of them have bins of other types of flour that you can buy in bulk (Henry's Market is good)....but, generally, you should still use some white flour, unless you want the texture of a hockey puck:)

In most recipes, you can substitute an equal amount of whole-wheat pastry flour for the white flour. I use it in just about everything.

Daa is correct!! use only half the white refined flour and half whole grain flour.

If you don't do it this way the bread or cake is too dense and heavy. It just doesn't rise correctly.

Use Oat flour, Rye, Graham, lots of different flours other than whole grain wheat for different textures and flavors.

Graham is whole grain wheat that is milled a lot coarser than just the average whole grain wheat flour. It will make for a very heavy end product, so be prepared.
