That is a tough cut of meat. So you will need to let it simmer in the gravy/sauce for an hour or two or so to tender up.
Season w/ S&P, dust both sides w/ flour. Brown in a skillet w/ a bit of oil in the bottom. Remove meat when brown on both sides. If you like, add a sliced onion and/or sliced mushrooms to the pan at this time. Saute until onions are getting a bit limp.
Deglaze the pan w/ beef broth, water + boullion cubes, or some of each plus a splahs or two of red wine. Scrape up the cooked-on bits on the skillet. If you want tomatoes in it, you can add a can of ciced tom w/ juice at this time, or a Tbsp or two of tomato paste.
Return meat to skillet, turn to LOW, and cover. Turn meat over now and then. It should be tender in about 1-1? hours. Add more water if sauce gets too low to cover meat.
Swiss Steak
2 pounds round steak, 1 inch thick
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons vegetable oil
1/2 cup chopped onion
1 can (14.5 ounces) diced tomatoes
3 tablespoons chopped green bell pepper
Cut steak into serving-size pieces. Combine flour, salt, and pepper; pound into round steak with meat mallet. In a large skillet, brown meat in hot oil. Add onion and tomatoes; cover and cook swiss steak over low heat for 1 1/2 hours, or until tender. Add green bell pepper; cook Swiss steak 15 minutes longer. Skim off excess fat. Taste and adjust seasoning.
Serve with mashed potatoes or noodles.
Well my aunt used to make this put chop steaks ina crock pot with some cream of mushroom soup and cook until meat is done and then you have a delish gravy after the sauce absorbs the meat and serve over mashed potatoes or white rice.
Or just fry them in a pan for abot 7 min on eat side in some oil then add flour to the remaining oil and add some broth, salt and pepper until thick
