What Can I Substitute for Cottage Cheese in a Pancake Recipe?!


Question: 3 tsp baking powder (Try Featherweight brand. No sodium or carbs.)
1 c protein (2 scoops Cytosport Evopro Fuji Apple whey)
1 c all-purpose flour
2 whole eggs
1 c cottage cheese (I use Friendship "No Salt Added" 1 percent cottage cheese.)
1 tsp vanilla extract
1 tsp butter extract (Try McCormick.)
1 c water
1 tsp olive oil (for the pan)

Combine the dry ingredients in a big mixing bowl. Add the eggs, cottage cheese, vanilla and butter extracts, and water, and mix it up. While you let it sit for 10 minutes, spread the olive oil in a nonstick pan. Then take a paper towel and wipe off most of it. Set your heat to medium, and once your pan is hot, mix the batter again and pour about a 6-inch pancake onto the pan. When bubbles form on top, flip it. Makes 8 pancakes.

ive never heard of putting cottage cheese in pancakes
i always substitute cottage chsse with ricotta cheese in my lasagna since i hate cottage cheese,so i would think that would work....
I would also think that you could probably just omit the cottage cheese all together without adding anything in its place....
But other things that would probably work would be plain/vanilla yogurt....sour cream....cream cheese...or milk....
when i make what I call "friend bread" which is really just a thick pancake,but delicious,I just use self rising flour,eggs,and milk.
So i'm thinking that since i didnt see any milk in your recipe above that the cottage cheese is being used in place of the milk...

Cottage cheese in pancakes?!?

I would say anything would be a better substitute ingredient than cottage cheese. No offense intended, but yuk!

I would try yogert

Yogurt or sour cream. The texture will be different, but taste very similar.

stewed fruit

cream cheese

chopped ham

apple sauce

ricotta, marscapone, sour cream, yogurt

I have used sour cream...marscapone or soft or whipped cream cheese also works well.

How about cream cheese or Ricotta cheese both of them have no flavor that it can interfere with rest of the ingredients.
