Blackened BBQ chicken, southern style, recipes?!


Question: The best BBQ I have ever eaten was when I was a kid. My baby-sitter's black husband made it. The chicken was thinly coated with sauce, then blackened. Would like to know how make it.

1 can (8 ounces) tomato sauce
1/3 cup molasses
1/4 cup vinegar
1 clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground black pepper
dash salt
for chicken use this one.
1 cup ketchup
3 tablespoons honey
1 tablespoon lemon juice
dash Tabasco or other hot pepper sauce

Mix all the ingredients in a saucepan and simmer on low for at least thirty minutes. This is great for southern pork style barbecue

Blackened chicken

1/2 teaspoon paprika
1/8 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/4 teaspoon dried thyme
1/8 teaspoon ground white pepper
1/8 teaspoon onion powder
2 skinless, boneless chicken breast halves
1 tablespoon vegetable oil

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Mix together paprika, salt, cayenne, cumin, thyme, white pepper, and onion powder. Rub one side of chicken breasts with spice mixture.
Heat oil in a cast iron skillet over high heat for 15 minutes.
Place chicken in hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on other side. Place breasts on a lightly greased cookie sheet.
Bake in preheated oven for 5 to 10 minutes, or until no longer pink and juices run clear.


Spicy southern bbq chicken


3 lb chicken parts (breast, drumstick, and thigh), skin and fat removed
1 large onion, thinly sliced
3 Tbsp vinegar
3 Tbsp Worcestershire sauce
2 Tbsp brown sugar
to taste black pepper
1 Tbsp hot pepper flakes
1 Tbsp chili powder
1 C chicken stock or broth, skim fat from top



Place chicken in a 13x9x2-inch pan. Arrange onions over the top.
Mix together vinegar, Worcestershire sauce, brown sugar, pepper, hot pepper flakes, chili powder, and stock.
Pour over the chicken and bake at 350o F for 1 hour or until done.
Baste occasionally.
