Of course, dried herbs can always be used in place of fresh. You just need to use a little more of them, and I tend to crush them in my palm before using to release the oils and flavors.

Here's a good parsley tip though. Get a few bunches, rinse and dry them very well. Chop up the leaves very fine, I mean really use the big knife and work it over. Save the parsley in an airtight container in your freezer. Keep it frozen and when you need to use it, just take a bit out (don't defrost). This will last for months and is a great way to keep fresh on hand. I do it all the time and there is a difference in the fresh vs. dried flavor.

Sure, actually dried parsley is preferred. You don’t actually taste it. It’s more of a way to make the bread look more attractive. Use real butter and be generous with the garlic. Best is to cut a clove in half and rub on the bread- add butter and lightly sprinkle garlic powder and dried parsley flakes.

4 tablespoons of butter/marg
1 tablespoon of garlic purée (make yourself from crushing lots of garlic or buy some in a jar)
2 tsp dried parsley
1 tsp salt, 1 tsp pepper,

Mix the above ingredients into a paste.
Get a french stick or similar and cut slices down into it almost all the way through but not quite. Put a big spoon of the butter mix into each cut pushing well in, rub any thats left on the top.
Place the french stick (cut in half to fit in oven ) into silver foil and seal up leaving the package loose around the bread.
Put in a medium oven for about 10 mins, then open packet and turn oven up to max heat for about 5 mins.

Something I do occasionally that is ever so slightly decadent is to take a baguette, spread it with garlic butter, sprinkle some grated provolone cheese and then some cooked bacon that has been chopped roughly, wrap in foil and place in the oven for ten to fifteen minutes for everything to heat through and become meltingly delicious.
