German Autumn Fruit Kuchen

When plums, nectarines, peaches, pears, and apples are in season, this is one of my favorite coffee cakes to bake. Serve it hot out of the oven for breakfast, brunch, coffee break, or dessert. The kuchen batter is a cross between a pastry and a cake. Tender and delicious, it is made without leavening.

Ingredients:
pastry:
1/2 cup unsalted butter, at room temperature
1/2 cup sugar
3 large eggs
1/2 teaspoon vanilla
1 cup all-purpose flour
1/8 teaspoon salt
fruit topping
14-16 purple plums, halved and pitted,or
3 large apples, peeled,cored,and cut into 1-inch thick slices,or
3 large ripe nectarines or peaches, peeled,pitted,and thickly sliced
1/4 cup sugar
1 tablespoon unsalted butter, cut into tiny pieces

Prep;
1. Preheat the oven to 375 F.
2. Butter and flour an 11-inch round tart pan with a removable bottom or a 9-inch square cake pan.
3. In a large bowl, cream the butter with the sugar until smooth; beat in the eggs until light and fluffy.
4. Stir in the vanilla, flour, and salt.
5. Spread the batter evenly in the prepared pan.
6. Press your choice of fruit evenly into the batter, sprinkle with the sugar and dot with the butter.
7. Bake for 40 minutes or until a wooden skewer inserted in the center of the cake comes out clean.
8. Serve warm or cool on a wire rack.
9. Serve with a topping of slightly sweetened whipped cream, if desired.

Plum Cake

How to make plum cake:
This is an old traditional fruit cake recipe. Notice that it uses dripping which was basically a recycled fat from the joint and therefore was economical. The cake is called plum cake harking back to the old usage of the word plum which was often referred to any dried fruit.

Ingredients
8 tablespoons dripping
4 cups flour
2 teaspoons baking powder
1 cup currants
1 cup sugar
pinch of salt
1/2 pint milk

Method
- Sift the flour with the baking powder.
- Rub the dripping into the flour.
- Add the fruit, sugar and salt.
- Mix in the milk.
- Bake in a suitable tin for about 1 1/4 hours at 200 degrees Fahrenheit


Christmas Plum Cake

2 c. flour
2 c. sugar
1 c. salad oil
3 eggs, beaten
2 sm. (4 3/4 oz.) cans strained plum
tapioca baby food
1/2 tsp. soda
1 tsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. red food coloring
1 c. pecans, chopped

Mix dry ingredients and add to sugar, eggs, salad oil, baby food and food coloring. Cook in tube pan at 350 degrees for 1 hour.
