Food Recipe?!


Question: I have to make a meal using rice, vegatbles and fruit. at least 1 vegetable and at least 1 fruit all in the same meal and i must be able to cook it all in one pan over a camp burner thing. Any ideas? I'll be greatul for any input.

Yes, tomatoes are considered a fruit. Just make a spanish style rice. Sautee some onions and peppers with a little salt, pepper and cumin. Once they get soft then add your rice. Then add 1/2 chicken stock and 1 1/2 parts diced tomatoes with more salt and pepper. If you have smoked paprika would be good as well. Make sure you have at least 1/2 extra part tomato than you would in the rice because it will be a little dry if you don't.

Mexicali Beef, Rice and Beans
1/2 lb. ground beef
1 small onion, chopped
1 8 oz. can kidney beans
1 8 oz. can Mexican seasoned stewed tomatoes
3/4 C. Minute Rice
1/2 C. water
Brown beef with onions. Drain grease. Add tomatoes, rice and water. Bring to a boil. Cover. Let stand for 5 minutes. Serve with tortillas or tortilla chips.


Maybe just warm some fruit and serve over ice cream

make a stir fry. you will have fruit which is pineapple, vegetables and your rice.

In a large dutch oven or skillet with a lid.......brown a pound of ground beef, one chopped onion and a couple of chopped garlic cloves. When the beef is done, stir in a small can of tomato paste. Salt, pepper, and chili powder to taste. (a little cayenne pepper if you're into spicy) Add one cup of regular rice and two cups of water. Stir, cover well, reduce heat and simmer 15-20 minutes. You can check it about halfway through....give it a good stir. Add shredded cheddar cheese. Cover for another 5 minutes........Serve.

If its for a project, then technically the tomato in the above recipe is your fruit.

Waldorf Salad

3 tart apples - peeled, cored and chopped
1 tablespoon lemon juice
1 cup seedless grapes
2 stalks celery, chopped
2 green onions, chopped
2 tablespoons mayonnaise
2 tablespoons plain yogurt
3 tablespoons apple juice
1/4 teaspoon celery seed
1 bunch watercress, trimmed and chopped
2 tablespoons chopped walnuts


DIRECTIONS
In a large bowl, combine the apples and lemon juice. Add the grapes, celery, and green onions; toss.
In a small bowl, whisk together the mayonnaise, yogurt, apple juice and celery seeds. Spoon over the apple mixture, and toss gently.
Wash the watercress, and dry thoroughly. Arrange greens on individual salad plates. Mound the apple mixture on top, and sprinkle with the walnuts

Since tomatoes are technically a fruit, make a stew with a meat (beef, chicken, pork) add tomatoes, a veggie (potatoes, carrots) and the rice.

I would make a hamburg jumble. Fry up the hamburg, add some rice, and a can of corn, and crushed tomatoes ( tomatoes are a fruit). Then cover, and simmer until the rice is cooked

Cous Cous or Rice w/ sauteed zucchini or yellow summer squash and raisins stirred in.... cook CC or rice in chicken stock, saute veggies in EVOO w/ S&P, and toss in raisins at the last minute before serving. Garnish w/ flat leaf chopped parsley and maybe some toasted pine nuts (pignoli)
