If you like what you had for dinner & have left overs - You are done! haha, but if not, I would totally get sushi - that sounds AWESOME or perhaps a Salad Nicoise (YUM - this salad is a combo of green beans, olives, boiled eggs, tuna, tomatoes, onions, artichoke hearts, anchovies, peppers & greens!! And of course topped with an olive oil, red wine vinegar & mustard dressing)
Hummus on a whole wheat pita with carrot sticks and an apple. Yummy!

Good for you, planning in advanced, I'm always a mess in the morning trying to put my lunch together. I really like chicken sandwiches: Strips of chicken, light mayo( if you like it), lettuce, tomatoes, onions, and any other veggie you like. Delicious! Also bagels are quick and easy lunches and you can always add meat like turkey or chicken to make it more filling. Whether you are going to school or work, make sure to pack a snake: fruit, bar, crackers, ect. so you wont be too hungry before lunch time, and it will keep you brain awake and sharp!

Baked Ziti
1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
1 can (16 oz) whole tomatoes, cut up
1 can (8 oz) tomato sauce
1 tsp. Italian seasoning, or 1/2 tsp each basil and oregano
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 lb. ziti or elbow macaroni, cooked and drained
1 package (16 oz) mozzarella cheese, diced
Preheat oven to 350 degrees. Saute beef, onion, green pepper in large skillet until onion is transparent and meat is lightly browned. Drain off excess fat.
Add tomatoes, tomato sauce, Italian seasoning, salt and pepper. Stir to mix. Add ziti and half the cheese, stir well. Spoon into 2 1/2 quart casserole and sprinkle with remaining cheese. Bake 25 to 30 minutes or until hot and bubbly and top is lightly browned.

Spinach and Bacon Quiche Recipe
-you can add sauteed onions, and zucchini into this with the spinach
6 large eggs, beaten
2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
2 1/4 cups shredded Swiss/or chedder cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set.

Crunchy Oven-Baked Chicken Toes
1 cup Corn Flakes cereal (any brand)
1 cup Plain bread crumbs
2 Tablespoons Brown Sugar
1 Teaspoon Salt
1/2 Teaspoon Freshly Ground Black Pepper
1/2 Allspice (the secret ingredient!)
2 Tablespoons Vegetable Oil
1/3 cup All-purpose Flour
2 Eggs, beaten
1+1/2 pounds Chicken breast tenders (2 packages), cute into
2 inch pieces
1/4 cup Honey mustard (such as Gulden's brand)
1/4 cup Barbecue sauce (any brand)
Preheat oven to 375 degrees.
Make the breading: Pour the corn flakes into a pie pan or other large, shallow dish. Crush the cereal up with your hands. Mix in bread crumbs, brown sugar, salt, pepper, and allspice.
Drizzle the vegetable oil evenly over the breading. Pour the oil slowly. A vegetable oil bottle has a big opening, so 3 tablespoons will pour out quickly! Toss and turn it to mix the oil all through the bread crumbs and crushed-up corn flakes.
Pour the flour into another shallow dish, and the beaten eggs into a third. Turn the chicken in flour, then eggs, and then in the special crunchy breading. Arrange the chicken toes on a nonstick baking sheet. Place the chicken toes in the oven and cook until crisp and brown all over, about 15 minutes.
When the toes come out of the oven, it's time to stir up the sauce for dipping them. Mix together honey mustard and barbecue sauce in a small bowl. Dip your hot chicken toes into your honey mustard barbecue sauce
