I don't know how I keep ending up here, but mention spare ribs and I'm there. Right how about some wings with that done in a similar vein and some grilled mixed peppers. Salad optional.

Sugar Pie’s Tamale Corn Casserole

1? cup cheddar cheese, divided
? tsp. fresh ground black pepper
1 can white (shoepeg) corn, drained
1 can whole kernel corn, drained
1 can Hormel tamales

Preheat oven to 350oF.

In saucepan, melt butter and cream cheese over low heat. Add drained corn and pepper, stirring well until all cream cheese is melted. Stir in 1 cup shredded cheddar cheese.

Coat a 9”x9” baking pan with nonstick spray. Drain excess chili off of tamales. Unwrap, and cut into 1” slices, and place in the bottom of baking pan. Pour corn mixture over tamales, spread evenly.

Bake for 30 minutes, uncovered. Top with remaining ? cup cheddar cheese, and return to oven for 10 minutes. When serving, scoop all the way to the bottom for each portion.

I'd keep it simple. Maybe corn on the cob and baby carrots with ranch dipping sauce :)

a big baked sweet potato with lots o butter and some brown sugar

Cheesy potatoes, coleslaw, cornbread, corn on the cob

I assuming you are grilling?

Grilled corn on the cob still in the husk. Soak the ears in sugar water for about an hour and place them on the grill. Turn them frequently. Cooks in 15-20 minutes.

Sweet Potato Pie for dessert.

My mom always makes mashed potatoes with our ribs..Baked beans are also good with it.

Potato salad, pasta salad, cole slaw, corn on the cob, baked beans, sliced tomatoes & cucumbers, steamed broccoli

Apple raisin cole slaw
Just finely grate cabbage
add grated apple
raisins and
mix with a dressing of mayo, vinegar, sugar and a little buttermilk until it is to your liking , the buttermilk helps to thin the dressing so its less like mayo and more like dressing

Simon and Seafort's Onion Rings

1 C. Flour
2 1/2 tsp. Baking Powder
1 1/2 tsp. Sugar
2 Tbsp. Lawry's Seasoning Salt

Peel brown skin from onions & cut into 1/8" slices; chill overnight to make them easier to separate into rings. Reserve inner rings for something else. Dip onion rings in milk and then in flour to cover completely. Prepare batter: Mix flour, baking powder, sugar, Lawry's Seasoning Salt, and garlic powder. Stir in 1 can (11 oz) beer until batter is consistency of cream. Heat frying oil to 365 degrees. Dip onion rings in batter and cook them in oil for 10 seconds. Lift basket and separate rings, then cook in oil again till golden brown, about 3 minutes. Drain, discard any broken rings. Salt & serve immediately.
