Question: left over cheese, chedder, blue, ricotta and cream cheese, chuck this into a pot with some milk, mixed italian herbs, poached onion and celery and mushrooms, then poach the fish with white wine and mixed herbs, don't cook through, it needs to be a thick fillet of fish
remove the fish to cool then break it into lumps and mix with the cheese mixture. grate some chedder and heat till the cheese is runny and serve with either a greek salad or julianne carrots and peas or beans.
