I'm looking for some healthy, edible, food activities to create with young children, ages 5 & 6. Any ideas?!

There's a book out about food Play Dates, that is specifically for that! It was highlighted on Martha Stewart's Fine Living show about 2 months ago... you could probably find out about it on the website for Fine Living.....
rice krispie treats and use cookie cutters to make fun shapes and add different colorful fruit chews or candies and vanilla frosting to stick to them. such as red hots for a green dinosaur (put food coloring in the marshmallow mixture)
try pizza making, use the ready to use dough from the grocery, the choice of toppings will depend on you and your budget.
salad making, just toss in the greens and the preferred dressings.
I have a recipe really easy and healthy, 1 bag of rottini pasta the one have three colors, cook the pasta and rinse the pasta until is cool enough, then peel 2 cucumbers and take the seeds out and diced it, then in a big bowl put the pasta and the cucumber then ad pepper and Italian dressing toss the salad and enjoy!!!!!!!
This isn't the healthiest, but it could be if you played around with it a bit -
Rice Krispie treat pizza.
Mix rice krispies and marshmellows as if you were going to make rice krispie squares (use about 1/4 normal recipe, I'd say)
Press into a pizza pan/pie plate.
Heres the unhealthy part: Use chocolate icing as the 'sauce' spread on an even layer. (Subsitute with low fat OR fat free chocolate pudding (might be messier though!) Or use whatever you think might be good. 1/2 fat free cool whip and 1/2 stawberry yogurt might be good, too!
Cut up kiwis and stawberries, or fruits of choice and place on your pizza like you would toppings.
Cut and serve!
