Tomato Soup


ngredients
1.5 qts/1,5 l water
2 lbs/1 kg tomatoes
1 big carrot
1 big parsley root
1 Onion
2 garlic cloves
1 tablespoon chopped dill
parsley
1 teaspoon Sugar
1 teaspoon flour
2 tablespoons oil if served cold or butter if served warm
2 tablespoons rice
salt

Directions
Wash the tomatoes and set to boil with 1 pint/500 ml water.
When the tomatoes have softened, strain. Grate the carrot, parsley root and Onion and set to boil with garlic and 1 qt/1 l water, until all vegetables are tender.
Then strain and add the tomato liquid to the vegetable liquid.
Also add rice, salt and Sugar, letting everything boil, covered, until the rice is half done.
Dust the flour over the soup, stir it and let boil until the rice is done.
Add chopped dill, parsley and butter.
This soup is also delicious served cold with sprinkled olive oil instead of butter.

I like lentil soup. get cups cups lentils - boil for 10 minutes with salt - take off stove rinse lentils then bring to a boil again- add carrots, celery, garlic, bay leaves, salt, pepper, 3 tablespoons tomatoe paste- you can add a can of diced tomatos or tomatoe sauce- you can have a chicken broth base too.

when done, drain most of broth, add butter, sour cream, half and half, black pepper, cheddar cheese.
let simmer on low on stove to melt cheese and combine.
(stir-in options: bacon, broccoli, corn, roasted red pepper, matchstick carrots.)

look in the fridge and get out all the left over veggies and toss them into a pot. toss in some meat that was left over and diced. add enough tomatos and tomato juice to cover all the ingredients in the pot plus 2 inches. Simmer for 45 minutes and instant soup.

I always make soups from left overs. Chicken broth and water to start.

You can add an egg, all your leftover (or frozen) veggies (potatoes, carrots, broccoli, onions, tomatoes, corn, green beans, anything!), left over meats, pasta, anything you have on hand works. Salt & pepper to taste, and voila! You've got a great soup. Remember, the slower you cook it the better it will taste.
