Sweet potatoe?!


Question: i looking for a way to make sweet potatoes? i fry them like french fries, i make them w/ pinapple juice ,syrup, butter, and brown sugar. i even grill them w/ butter and brownsugar. as u see i like them w/ a sweet taste . anyone out there know of any other way to make them? ( i have given up the white potatoe) so plzz help me?

SWEET POTATO CASSEROLE

INGREDIENTS
3 large sweet potatoes
3 tablespoons butter, softened
1 cup packed brown sugar
1 cup chopped pecans
1 cup flaked coconut (optional)
1/3 cup all-purpose flour
1/2 cup white sugar
2 eggs
1/4 cup milk
1 tablespoon grated orange zest
3 tablespoons butter
1 teaspoon vanilla extract
1/2 teaspoon salt


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Poke holes in the sweet potatoes with a fork, arrange the sweet potatoes on a cookie sheet. Grease an 11x7 inch glass baking dish.
Bake sweet potatoes for 1 hour. Let cool, then mash in a large bowl. There should be approximately 3 2/3 cups of mashed sweet potato.
Combine softened butter with brown sugar, nuts, coconut and flour; stir with a fork. Set aside.
Combine sugar, eggs, milk, orange peel, butter, vanilla, salt with the mashed sweet potatoes. Beat the mixture with an electric mixer until smooth. Pour mixture into prepared baking dish. Sprinkle the brown sugar-nut mixture over the top of the mixture.
Bake for 35 minutes.


SWEEP POTATO PUFFS

INGREDIENTS
1 cup mashed sweet potatoes (without added milk and butter)
1 tablespoon brown sugar
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
6 large marshmallows
1/3 cup graham cracker crumbs

DIRECTIONS
Combine sweet potato, brown sugar, salt and cinnamon; shape a small amount around each marshmallow. Roll in crumbs. Place on a greased baking sheet. Bake at 350 degrees F for 6 minutes or until lightly puffed (do not overbake or marshmallows will melt).

SWEET POTATO SOUFFLE

INGREDIENTS:
6 sweet potatoes
1 cup white sugar
1/2 cup milk
1/2 cup melted butter
1 teaspoon vanilla extract
2 eggs, beaten 1/2 teaspoon salt

1 cup dark brown sugar
1/3 cup all-purpose flour
1/3 cup melted butter
1 cup chopped pecans

DIRECTIONS:
1. In a large stockpot, cover sweet potatoes with 1 inch of water; boil for 20 minutes, or until fork tender. Drain, allow to cool and remove skins.
2. Preheat oven to 350 degrees F (175 degrees C). Grease or butter one 2 quart casserole dish.
3. Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.
4. Reduce speed to low and add sugar, milk, butter, vanilla, eggs and salt. Mix well.
5. Allow any potato 'fibers' to remain on the beater and remove. Pour sweet potato mixture into the casserole dish.
6. Prepare the topping in a small bowl by whisking together the brown sugar, flour, butter and pecans. Sprinkle mixture over potato mixture and bake for 40 minutes.

Are the thumbs down because I didn't mention butter, sugar or cinnamon?

I make mash potatoes with them.. I use cinnamon and brown sugar and butter. then bake them with a few marshmallows on top. you can leave out the marshmallows but it is too good

just bake them in oven. spray with cooking spray and poke with fork. place them on a pan lined with foil and bake for about 30 min. serve like a baked potato. with a dollop of butter. this is my favorite way to eat them (unless its in a pie)

you could make a sweet potato puree, or even make bread, its actually pretty good.

you bake them in the oven then top with butter and brown sugar and a pinch of cinnamon. it is very good.

Sweet Potato Oven Fries with Avocado Dip

Sweet Potato Fries:
2 large sweet potatoes, peeled or unpeeled, cut into 4-inch long and 1/4 to 1/2-inch thick fries
2 tablespoons olive oil, or more as needed
1 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon ground coriander
Coarse ground rock salt and freshly ground black pepper, to taste
Avocado Dip, recipe follows


Preheat your oven to 450 degrees F. Line a baking sheet with aluminum foil and set aside.
Place the sweet potatoes in a large bowl and toss with olive oil until the sweet potatoes are coated. Add the paprika, chili powder, coriander, salt, and pepper; toss to distribute evenly.

Arrange the coated fries in a single layer on the prepared pan. Bake for 20 minutes on the lower rack until the sweet potatoes soften. Transfer the pan to the upper rack of the oven and bake 10 minutes longer, until fries are crispy. Serve with Avocado Dip.



Avocado Dip:
1 avocado, ( Haas works best )
1/3 cup mayonnaise
1/3 cup cream cheese
1 jalapeno, seeded and chopped.
2 scallions, white and light green part only, chopped
1 lime, juiced
Salt and freshly ground black pepper
Place the avocado, mayonnaise, cream cheese, jalapeno, scallions, and lime juice into a blender or small food processor. Blend for 1 minute or until you have a smooth paste. Season with salt and pepper, to taste. Serve as a dip for the Sweet Potato Oven Fries.

Try just baking them in the oven....dollop of butter, sprinkle of cinnamon.....mmmmm

personally boil them 4 like 1 hour

Mash like white potatoes but use butter, brown sugar, whole whipped egg and a little heavy cream. Bake @ 350' for 30 min. From this basic mash you can go crazy depending on your taste. Additions we like: pecans, pineapple, and raisins, and cranraisins (not all at once, one at a time) you get the idea the possibilities are endless.

1 1/2 to 2 pounds cooked ham, cut in 1 to 1 1/2-inch cubes
2 1/2 pounds fresh sweet potatoes, cooked, peeled, and cut in 1 1/2-inch pieces
1 medium green pepper, cut in 1 1/2-inch squares
1 teaspoon cornstarch
1 small (6-ounce) can frozen pineapple juice concentrate, thawed
1/2 cup chili sauce
3 tablespoons honey
2 tablespoons cooking oil
PREPARATION:
Thread cubed ham, sweet potatoes, and green pepper squares alternately on 6 skewers. Brush kabobs with Pineapple Sauce (below). Grill over medium coals for 15 to 20 minutes, brushing with sauce frequently

Just bake them (like a regular potato), then cut the top and fluff them up. Put in lots of butter, cinnamon, brown sugar (maybe even maple syrup) .... You can also use them to make potato salad and add sweet things into it (pineapple, pomegrante seeds, mango bits, Craisins). Mix some mayo with pineapple juice, cinnamon ... or mix mayo or sour cream with a little maple syrup or orange marmalade..... And you can mash them, with butter, maple syrup (or orange marmalade), brown sugar, cinnamon

Hawaiian Sweet Potato Salad
This sounds so good to me, with bacon, pineapple, Dijon mustard and macadamia nuts for some of the ingredients. Don't want to lose this. 8 ounces bacon, cut into 1/2 inch pieces
3 cups sweet potatoes, cooked and chopped
2 cups pineapple chunks
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons fresh lime juice
1/2 teaspoon pepper
1/2 cup macadamia nuts, chopped
lettuce leaves, to line serving bowl

Fry bacon in skillet until crisp; drain.
Crumble bacon.
Mix the bacon with sweet potatoes and pineapple in a large bowl.
Combine mayonnaise, Dijon mustard, lime juice and pepper in a small bowl; mix well.
Add to sweet potato mixture; mix gently.
Stir in nuts.
Spoon into lettuce lined serving bowl and serve.
