Steak and Liver Pie?!


Question: I planned on baking steak and kidney pies today.

I went out and got liver at the butchers by mistake, would steak and liver pie be ok or should I go back and buy some kidneys?

Get some more kidneys, then, tomorrow you can braise the liver with onions in a brown gravy. Serve with french fries and brocolli or braised leeks, mustard sauce as an option. From memory liver freezes OK, so it doesn't have to be tomorrow.

Problem is that liver tends to get leathery if you can't cook it for a long time. Cooked for too short a time and it isn't nice, strange taste. Or cokked too long it can fall apart into a powdery gravy that spoils the texture of the pie. Kidneys are much more forgiving and have that nutty texture that makes the pie so popular.

That should be tasty..

Probably. Just don't cut the liver too small so it doesn't get overcooked.
