Get a recipe for pasta dough, off the Internet. basic flour water and whole eggs. Roll it out real thin. Make a mixture of Ricotta cheese, parsley and romano cheese and egg, salt black pepper. Once you have the pasta dough in thin strips put about a teaspoonful of the filling onto the dough cover with the top to make a pocket. Take a large round glass use that to cut the ravioli shape. Crimp each piece with a fork. Let the ravioli dry out for about a few hours before boiling.
If you don't want to do all this Costco, Kirkland Brand has a good store bought ravioli that you buy and add your own sauce.
You're going to need some specialized equipment, if you can't get a pasta roller by tonight, I suggest you purchase the ravioli at a local Italian deli.
Semolina flour
eggs
put the flour on a flat surface and create a well in the middle. add eggs. mix thouroughly by combining the flour in the middle and gradually work to the outside. knead well, until very smooth...like a satin fabric.
roll dough repeatedly through pasta roller until desired size. Place dough and add a mix of ricotta cheese, mozzerella cheese, eggs, onion powder, garlic powder and parsley into small sections to create squares. Add a second layer of dough on top and press the edges together. Use a ravioli tray or ridged pasta cutter to cut out the shapes.
Boil until done. Add sauce.
Good luck.
If you want to make your own ravioli, you can use wonton skins (in the refrig. section of grocery store) and fill with a combination of ricotta, parmesan, an egg, salt & pepper. You can add cooked Italian sausage or mushrooms or your favorite ingredients to that basic recipe. Here's the Food Network recipe for how to make. They're SO easy. Just be sure to press out all of the air when sealing ravioli or they'll explode in the boiling water. http://www.foodnetwork.com/food/recipes/...
You can add any filling, i have given you my spinach and ricotta one as i like it................
For the pasta:
110g/4oz plain flour
2 eggs
For the filling:
110g/4oz spinach
pepper
1 egg, yolk only
55g/2oz ricotta
olive oil
salt and freshly ground black
Method
1. Bring some water to the boil in a large and a small saucepan.
2. Combine the flour and eggs in a large bowl.
3. Break off a small piece of the dough. Wrap the rest in cling film.
4. Push the piece of dough through the rollers of a pasta-making machine. Repeat, again and again, until the dough is flat and thin.
5. Do the same with the rest of the pasta dough.
6. Take a small pastry cutter and cut rounds from the flat sheets of pasta. Set pasta circles aside.
7. Drop the spinach in the small saucepan of water. Boil for 3 minutes.
8. Drain spinach and squeeze dry.
9. Place spinach in the food processor. Add the egg yolk and ricotta and blitz to mix.
10. To make the ravioli, take a pasta circle. Place a teaspoon of the ricotta mixture inside. Place a second pasta circle on top. Seal the ravioli with a little water.
11. Drop the ravioli in the boiling water. Boil for 3-5 minutes.
12. Drain the ravioli, then serve with a drizzle
First of all, don't listen to people who say it's complicated and you need special equipment. I make handmade pasta on a regular basis; it is neither difficult nor do you need any equipment. I've made ravioli many, many times.
First, decide what you want in your ravioli. I suggest either a meat filling, or a cheese filling. For the meat filling, saute ground meat with onions and garlic, and add some shredded mozzarella. For the cheese filing, which I highly recommend, take a bowl, put ricotta cheese (not cottage cheese) in, a few good dashes of parmesan cheese, salt, pepper, and chopped green onions. Don't worry about measuring anything- just think about how you want it to taste. Add an egg into the cheese mixture and set it to the side.
Put all-purpose flour in a bowl, add salt, dried oregano, dried basil. Mix a couple tablespoons olive oil with cold water and one egg. Pour this slowly into the flour, mixing with your hands until it comes together. It should be like pie pastry- not wet, not dry. Roll it out with a rolling pin, or whatever object you have. A can will do. A heavy glass will do. Roll it thin and cut squares out. Dab a little filling onto one square. Put a little water around the edge of the square, like you're sealing up an envelope. Then put the other square on top and seal it all around by pressing it with a fork. Voila! Ravioli. It seems like a bit of work, but it's well worth the effort- it'll be a million times better than storebought. Just boil water and put them into the water for a couple minutes.
Did you mean homemade ravioli or how to prepare frozen ravioli? I can give you two ways to prepare frozen ravioli. First, is the classic way. Boil water, put ravioli in and cook for about 8-10 minutes, until the ravioli is floating. Drain and serve with pasta sauce on top.
The second way is called Ravioli with Garlic Sauce and my family loves it!! It's from the "What's for Dinner? 365 Lean and Natural Dinners" Cookbook:
16 large frozen cheese ravioli
For the next ingredients, I find it best to double these:
1 Tbs. margarine, melted
2 garlic cloves, finely chopped
2-3 Tbs. fresh parsley, chopped (I use dried parsley)
4 Tbs. grated Parmesan cheese
2 Tbs. olive oil
2 Tbs. water
1. Cook ravioli according to package directions, until dough is tender, 10-15 minutes.
2. Meanwile, combine all remaining ingredients. Drain ravioli quickly. Pour sauce over it, toss and serve immediately.
Either meal you choose can be served with your favorite green veggie and garlic bread. Yum!!!
