I love Jerk Chicken Very hot and spicy!!!! Yummmmmmmm!!!!

Jerk Chicken

? c. whole allspice
1 1” cinnamon stick, broken
1 c. red onion, chopped
? c. green onions, chopped
? c. dark rum
1 Tbs. sugar
1 tsp. dried thyme
3 Tbs. peeled fresh ginger, grated
3 Tbs. fresh lime juice
2 Tbs. Worchestershire sauce
1 Tbs. soy sauce
1 tsp. fresh nutmeg, grated
4 Habanero or Scotch bonnet peppers, seeded and chopped
3 cloves garlic, chopped
2 skinless half chicken breasts
2 chicken leg quarters, skinned
? tsp. salt
? tsp. black pepper
1 Tbs. vegetable oil

Cook allspice and cinnamon in a medium skillet over medium heat for 5 minutes or until toasted. Place in a coffee grinder and process until finely ground.

In a blander, add all ingredients (12) to chopped garlic,
with allspice mixture and blend for 2 minutes until smooth.

Sprinkle chicken with salt and pepper. Place chicken in a
ziplock bag with the spice mixture; seal and marinate 4 hours or over night in a refrigerator, turning occasionally. Remove chicken and discard marinade.

Heat oil in a 10” or 12” Dutch oven over high heat. Add
chicken, cook 2 minutes until browned, turn chicken over. Bake for 15 to 20 minutes at 400o until chicken is cooked through.

Serves 2 hungry adults or 4 smaller appetites

I love roasting legs and thighs with olive oil, cayenne pepper, and chili rub. Yummmmy. Simple too! If you marinate them in oil and those spices first, it's even better.

Spicy Oven Fried Chicken,,,,,,,,,,,,,,,,,,,,,SO GOOD!!! :-0

1 cup buttermilk
1/4 cup hot pepper sauce
4 boneless skinless chicken breast halves
1 cup dry breadcrumbs
1/2 cup all-purpose flour
2 teaspoons onion powder
1 teaspoon cornstarch
1 teaspoon white sugar
1 teaspoon garlic salt
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 tablespoons olive oil


In a medium bowl, mix the buttermilk and hot pepper sauce.

Place chicken in the mixture to coat.

Cover, and marinate in the refrigerator 8 hours or overnight.

Preheat oven to 350 degrees F (175 degrees C).

In a separate medium bowl, mix dry bread crumbs, flour, onion powder, cornstarch, white sugar, garlic salt, salt, pepper, paprika, and cayenne pepper.

Thoroughly coat the chicken in the bread crumb mixture.

Heat the olive oil in a medium skillet over medium heat, and cook chicken 5 to 7 minutes on each side, until lightly browned.

Transfer chicken to a medium baking dish, and bake in the preheated oven 30 minutes, until no longer pink and juices run clear.

BBQ Party Wings
Ingredients:
? 2 pounds Chicken Wings (folded)
? 1 Bottle Demon Pig BBQ Sauce
? Demon Pig BBQ Rub
? Spray Margarine


Directions:
Rinse and dry wings, folding and locking tip. Spray wings with pump spray margarine and coat with Demon Pig BBQ Rub. Bake on sheet pan 45 minutes in preheated 350 degree oven. Remove to crock pot or covered baking dish. Coat with Demon Pig BBQ Sauce and cook for one hour on high. Reduce to low, stir and serve. To finish in conventional oven - bake at 350 degrees, when covered and sauced. Reduce heat to 250 to finish.

Notes: Any flavor of Demon Pig Sauce works with this recipe. Blaze Orange is my favorite.
