Can anyone give me some good recipes for making homemade pasta sauce?!
Answers: i like pregos sauces but have tried some homemade ones that were just amazing and i would love to make them. any homemade recipes would be great.
ROASTED RED PEPPER PASTA SAUCE
1 tablespoon butter
1 green onion
1 small onion or shallot
2 garlic cloves
1/2 red pepper
2 tablespoon Philadelphia roasted red pepper cream cheese
2 tablespoon flour
2 cups milk
1 teaspoon crushed chili peppers
1 tablespoon Parmesan cheese
1 teaspoon salt
? teaspoon pepper
dash paprika
dash oregano
dash basil
chopped parsley
Dice onions, garlic and red pepper. Sauté onions, red peppers and garlic in butter until soft and tender. Add flour and stir. Slowly add milk and melt in Parmesan and cream cheese. Add spices to taste. Top with fresh chopped parsley.
Sauce will thicken upon standing. Add less milk or more flour for a thicker sauce.
OR
VODKA SAUCE
1/4 lb. diced pancetta (Italian bacon), do not substitute
1/4 c. butter
1/3 c. vodka
1 1/2 c. heavy cream
1 1/2 c. tomato sauce
Melt the butter in a large frying pan. When the butter foams, add the diced pancetta. When the pancetta browns slightly (takes 2 to 3 minutes), add the vodka and stir.
After the alcohol burns off, stir in the tomato sauce and cream (the alcohol only takes a minute or two to burn off).
Stir continuously for 5 - 8 minutes
OR
FAST CREAMY PASTA SAUCE
4 tablespoons butter
3 cloves garlic, pressed
1/3 c. grated Parmesan cheese
3/4 c. heavy cream
1/2 tsp. dried basil
In a small saucepan, melt butter in oil. Add garlic, cheese, and basil, stirring to blend over medium-low heat. Stir in cream.
Makes about 1 cup of sauce that can be tossed on your favorite pasta.
For a variation, try adding a can of chicken noodle soup along with your cooked pasta when sauce is done. Heat and serve.

TOMATO SAUCE:
basically, add what flavors, I would put in:
2-3 tomatoes
1 clove garlic
a few basil leaves
2 or 3 mushrooms
2 bay leaves
ground beef (if wanted)
and any other veggies you want in there
these amounts are not certain, experiment with it a bit.

This is a 'Spaghetti Red Sauce' my aunt used to make: Put 2 lbs. hamburger into a large saucepan. While it is browning, add 1 large can tomato juice and 2 small cans tomato paste. Then add 2 t. salt, 2 T. chili powder, 1 T. paprika, 1 T. oregano, 1 T garlic powder, & 3 T brown sugar. Simmer for at least 1 hour. If you use cheap hamburger, you will have to drain the grease off. Serve over spaghetti and serve parmesan cheese on the side.
Here are my faves:
Easy Red Sauce
1 can crushed tomatoes
2 cloves garlic, crushed or grated
1 tablespoon olive oil
5-6 basil leaves
salt and pepper to taste
Simmer the tomatoes and garlic in olive oil, seasoning to taste with salt and pepper, 10-15 minutes. Tear or chop the basil leaves and stir into the sauce. Toss with pasta and parmesan cheese.
Easy White Sauce
4 tablespoons butter
1/2 cup parmesan cheese
1/4 cup half and half
salt and pepper to taste
Melt the butter on low. Stir in the cheese and cook 3-4 minutes, stirring constantly. Stir in the half and half. Season to taste with salt and pepper. Toss with pasta.
Easy Linguini and Clam Sauce
1 small onion, sliced thinly into half circles
2 cloves garlic, chopped or grated
1 can clams
1/2 cup white wine
2 tablespoons dried basil
salt and pepper to taste
Saute the onions and garlic in a little olive oil. Add the white wine, and simmer 5 minutes. Add the clams in juice, salt and pepper, and the basil. Simmer another 5 minutes. Toss with cooked linguine. Enjoy!
