Filipino Chicken Adobo Recipe

4-5 lbs. chicken thighs
1/2 cup white vinegar
1/2 cup soy sauce
4 cloves garlic, crushed
1 tsp. black peppercorns
3 bay leaves
Combine all ingredients in a large pot. Cover and marinate chicken for 1-3 hours. Bring to boil, then lower heat. Cover and let simmer for 30 minutes, stirring occasionally. Uncover and simmer until sauce is reduced and thickened, and chicken is tender, about 20 more minutes. Serve with steamed rice.
I say that PB&J with some potato chips will be good!
Make a beef stew(tomato base) with potatoes, carrots, pumpkin, plaintains, or yucca(if you are bold). I had this dish in Costa Rica and it was awesome.

Well here's a hearty dish that is quite popular in canada.
Minced meat:
- take 1 lb of ground beef and put it in a pot. Cover it with water and boil for 20 minutes (breaking up the meat into little pieces as it cooks).
- Throw in 2 medium onions cut into wedges and a small bag of baby carrots (i buy the prewashed small bags at the grocery store). Continue boiling over medium heat for about 20 minutes or until the veggies are tender.
- Meanwhile make mashed potatos in a seperate pot.
- Using a slotted spoon take everything out of the water and put it in a bowl.
- Serve over the mashed potatos. Peas also compliment this dish if you like. I alway enjoy using ketchup as a condiment.
When I need a recipe I go to recipezaar.com They have a feature that lets you choose the ingredients and it finds recipes for you you can even filter by specific cuisine. Its a really good source for dishes you may not have even heard of. You can also filter by difficulty.
From Mexico try either one of these, they are easy and delicious. If you don't have a crock pot or slow cooker it can be cooked in a pot on the stove on low for about 1 to 2 hours or in a roasting pan in the oven for about 3-4 hours at 350 F.
Chile Verde
4 lb pork roast (boneless butt or shoulder), cut in chunks
1 large can Ortega chopped green chiles
1 small can Ortega chopped jalapenos
Place pork roast in crock pot. Add green chiles and jalapenos, but no water. Cook on high 8-10 hours. Serve with flour tortillas, beans and mexican rice.

Carmelized Pork Carnitas
1? lbs boneless pork butt or shoulder
2 tbs brown sugar, packed
1 tbs tequila (optional)
1 tbs molasses
? tsp salt
? tsp pepper
? tsp cumin
2 cloves garlic, finely chopped
1/3 cup water
Cut pork in 1 inch cubes. Place in crock-pot and top with all other ingredients. Cook on low for 8-10 hours. Remove with slotted spoon and place on cookie sheet and broil until slightly brown on top. Serves about 10. Serve with corn tortillas and pico de gallo or salsa.

Almond Streusel Cake
Makes 16 servings
For the streusel:
1 cup (250 mL) firmly packed light brown sugar
1 cup (250 mL) sliced almonds
1/4 cup (60 mL) all-purpose flour
3 tbsp (45 mL) butter or margarine, melted
1 tsp (5 mL) grated orange zest
In a medium bowl, mix together the sugar, flour, nuts and zest. Stir in the butter or margarine until crumbly.
For the cake:
1/2 cup (125 mL) butter, softened
1/2 cup (125 mL) granulated sugar
3 large eggs
1 tsp (5 mL) grated orange zest
1/2 tsp (2 mL) vanilla
2 cups (500 mL) all-purpose flour
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
2/3 cup (160 mL) orange juice
In a large mixing bowl, using an electric beater set at medium speed, beat together the butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange zest and vanilla.
In a large bowl, combine flour with baking powder and soda. Reduce mixer to low speed and alternately beat in flour mixture and orange juice into egg mixture, beginning and ending with flour.
Butter a 10-inch (25-cm) tube pan and preheat oven to 350 F (180 C). Spoon half the cake batter into prepared pan. Sprinkle with half the streusel. Top with remaining batter and streusel. Bake until a toothpick inserted in centre comes out clean, 30 to 35 minutes. Transfer pan to wire rack to cool completely.
If desired, prepare a glaze with 1/2 cup (125 mL) icing sugar and 2 1/2 teaspoons (12 mL) orange juice. Turn cake out onto a serving dish, placing it right side up. Drizzle with the glaze.
Arroz con Pimientos
INGREDIENTS:
1 Tbsp olive oil 1 cup uncooked brown rice 1/2 garlic clove, minced
1/2 small onion, chopped 3 cups meat stock (or bouillon cubes) 2/3 cup corn (frozen, canned or fresh-cooked)
1/2 cup pimientos, cut in strips 1/2 cup grated cheese 2 Tbsp soft bread crumbs
In a skillet, heat olive oil and brown rice. Add garlic clove and chopped onion. Saute until onion is tender. Add chicken stock or beef stock. Add corn. Cook until rice is fully cooked, covered, stirring occasionally. Add pimientos and cheese, mix in. Add bread crumbs, mix, simmer for 15 minutes, covered.
Guatemalan Chicken with Pineapple (Pollo en Pina)
Ingredients
2 tablespoons olive oil or vegetable oil
3-3 1/2 lbs broiler-fryer chickens, in pieces
1 medium onion, chopped
2 cloves garlic, minced
1 pineapple, cut in 1 inch cubes or
1(20ounce)can unsweetened pineapple chunks, drained
1/2 cup dry sherry
2 tablespoons vinegar
1 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 dash pepper
2 medium tomatoes, coarsely chopped
hot cooked rice(can cook concurrently so all is ready at the same time)
Directions
1Heat oil in lg skillet; cook chicken on med heat until brown on all sides-- approx 15 min.
2Remove chicken, cook onion& garlic in remaining oil until onion is tender, stirring frequently.
3Return chicken to skillet.
4Mix all remaining ingredients except tomatoes (and rice!); pour over chicken.
5Bring to a boil, reduce heat, cover, and simmer 20 min.
6Add tomatoes; simmer, uncovered, until thickest pieces of chicken are cooked through-- approx 20 min.
7Serve with rice.
