- Meatloaf baked in a standard 4-inch by 4-inch by 8-inch loaf pan is baked at 350 degrees F. for 1 to 1-1/2 hours.

- Internal temperature of the meatloaf should register 170 degrees F. for beef or 185 degrees F. for pork.

- Let meatloaf stand about 20 minutes or longer after removal from the oven before serving. This helps it set and makes it easier to slice.

Additional Tip :-

1. For a firmer texture to your meatloaf, use ground meat that has been run through the grinder at least 2 or 3 times.

2.The higher the grade of ground meat, the less fat and shrinkage will result. However, keep in mind that less fat means less flavor and moistness.

3.Ground chuck is the grade of choice for the most flavor.

4.Do not overdo the bread crumbs. An excess can make the loaf spongy.

5.Add tomato sauce to the meat mixture for added moisture.

6.Do not over-knead the mixture or texture will be lost. Mix just enough to combine the ingredients.

7.In place of bread crumbs, add a mashed wet slice of white bread and a tablespoon of salad oil.

8.If you like using the beef/pork/veal method, feel free to experiment with different ratios as long as the total weight of the meat remains the same in volume.

9.For individual servings that bake quickly, mound meat mixture into greased muffin tins, which should be done in about 20 minutes.

10. Use about 1/2 cup filler per 1 pound of meat. This filler can be bread crumbs, mashed moist bread, oat bran, grated potato, grated carrot, mashed potatoes or wherever your experiments take you.

11. Add a cup of grated cheese to the meatloaf mixture before baking, and another 1/2 cup over the top of the loaf during the last 15 minutes of baking.

12.Add 1/3 cup of vegetable juice, wine, beef broth, or beer to the mixture for added flavor.

13. Soft bread crumbs make a more tender, juicier loaf than dry crumbs. You can briefly soak dry crumbs in a bit of milk before adding.

14.To minimize cracking, smooth the top of the loaf by rubbing in a little cold water.

More like 375 and start checking with a thermometer after about 40 minutes. The target temperature will depend on the meat you use. Pull the meatloaf out of the oven and let it rest for ten minutes and it will finish cooking due to residual heat.

I usually cook mine at 350 for 45 minutes depending on the thickness of the meatloaf. I layer onions on the bottom of the pan and place the meatloaf on top.

This is going to sound strange, but my boyfriend swears by cranberry sauce in the meatloaf itself and you can't even tell. I makes is way more tender and flavorful. He has also thrown in Jack Daniels BBQ sauce too. Just some suggestions to stir it up a bit.

Good luck with your dinner on Wednesday!!

Was it burnt on the bottom? Maybe your oven rack was too low. The pan should sit in the middle of the oven or close to it to heat evenly. It also depends on if you use a loaf pan or a square pan, metal or glass. Metal cooks faster and tends to burn more than glass. A loaf pan is deeper and takes longer to cook through than a square. If using a square I would reduce the time to 45 minutes. This is my families favorite and it's easy to make. Makes great meatloaf sandwiches for leftovers too. It comes out perfect every time.

Moms Sweet & Sour Meatloaf

Sauce:
2 small cans tomato sauce
1/4 cup worchestershire sauce
1/2 onion chopped
1 tablespoon dried parsley
1/2 cup brown sugar

Mix all sauce ingredients together in bowl, set aside.

Ingredients (Meatloaf):
2 pounds ground beef
1/2 chopped onion
1 egg, beaten
1/2 cup or more if needed, quick oatmeal (not instant)
1 teaspoon garlic salt

In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.

Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.
