Can I cook with fresh German thyme?!


Question: I bought a thyme and rosemary plant from Wal-mart, can I use them to cook with? I normally use the stuff in the jars

of course, that's why that anti-american store sells them, so you can use fresh herbs! but it is not true that you must use more! you must use less! these herbs, fresh, are tremendously powerful in flavor--i've done it with herbs i grew in my garden, so i know this. just chop some up and taste it, then taste the dried, jarred version.

here's a good thing to do instead: each day, cut, close to the earth, a few sprigs of both of the herbs, then use twine to tie the bottoms together. then hang them upside down in either your kitchen or in the attic (better up in the attic, where it is the warmest). when dried, voila!, there, you have your own dried, fresh, strong herbs. then do the taste test again.

Absolutely! They'll taste better than dried, but you'll have to use more. If a recipe calls for 1 tsp dried, use 1 TBS fresh.
