Im eating mash, chicken nuggets, onions rings with some tomatoe sauce with garlic. Its a nice mix.

ok well this isnt a 'spectacular' meal but one of my faves is chicken in peppercorn sauce. i know, i know. its usually steak that is served with peppercorn sauce but i love, love, love it with chicken. just cook off some onions, carrotts and potatoes and garlic if u wish and add a can of tinned tomatoes in a pan, add whole chicken breasts or wings and fry for 15 mins or until starts to turn brown, put the whole lot into a baking dish, pour over some peppercorn sauce (i use a bought one..... tut tut!) and heat in the oven for a further 30-40 mins. trust me its delish! sounds wrong but eat it and ul love it!

okay, i love to experiment and here's something quick and simple-
sautee chicken and then set it aside. chop up onions and slice several grape tomatoes in half. let them simmer, covered about 5 minutes. you might want to toss in some flour or water to make the sauce a bit thicker. dredge over the chicken, serve over rice and enjoy!

Golden Harvest Chicken
4 chicken breast halves, skinned
Golden Harvest Marinade (recipe follows)
2 teaspoons cornstarch
2 tablespoons cold water
4 green onions, cut in 1/2-inch pieces
steamed broccoli flowerettes
2 tablespoons vegetable oil
1 medium red apple, halved, cored and cut in 1/4-inch slices
With sharp knife make diagonal cuts 1 inch apart in thickest part of each chicken breast. Place chicken, smooth side down, in container with marinade. Cover and refrigerate 30 minutes. Remove chicken from marinade; reserve marinade.
In frypan, place oil and heat to medium high temperature. Add chicken, smooth side down, and cook about 5 minutes or until brown. Drain oil from frypan. Turn chicken, cover with reserved marinade, place apples on top of chicken and simmer over low heat about 30 minutes or until fork can be inserted in chicken with ease. Remove chicken and apples to serving plate. Over high heat, reduce marinade by one-half. In small dish mix cornstarch and water until smooth. Add cornstarch mixture and onions to frypan, stirring constantly, and cook until thickened. Spoon sauce over chicken. Garnish with steamed broccoli flowerettes.

Doesn't get easier than the crockpot. I love that I can throw it all in before I leave for work and I come home, maybe have to cook some rice or something on the side, but for the most part, you can cook an entire meal as one dish that cooks while you work! I can do a ham, lasagna, soups, you name it. Below are some of my faves.

Some of the things I've done in mine:

Teriyaki

2 lbs meat (steak, pork, chicken - your preference)
1 onion
1 pepper
1 cup soy sauce
2 tablespoons sugar
2 tablespoon vegetable oil
2 teaspoons groung ginger
2 tablespoons minced garlic

Cut meat and veggies into bitesize pieces and layer in crockpot, meat on bottom. Whisk all over ingredients in separate bowl and poer over in crockpot. Cook on low for 4 - 6 hours. Serve over rice.

Another chicken recipe:

3 - 4 chicken breasts (can be frozen)
1 can Rotel or salsa about 15 oz (drained if Rotel)
1 can black beans
1 can corn
1/2 packet of taco seasoning
8 oz. cream cheese

Place all in crockpot, cook on low for 5 - 7 hours, until no longer pink. I put mine on in the morning when I leave for work about 9, done by 5.
30 - 45 minutes before serving, put cream cheese on top, turn crockpot on high. Let cream cheese melt, then stir right before serving.

Search recipezaar.com. THey have a crockpot section, there are tons of things to whip up. This way, your main dish is taken care of, you can have more time to take care of side dishes and such

Non Crockpot

Chicken breats (3 - 4)
1 egg beaten, with 1 teaspoon garlic powder)
1 sleeve Ritz crackers, crushed
butter

Preheat oven to 350. Dip chicken in egg, then roll in Rtiz. Place in baking dish and dot on and around chicken with butter. Cook for 20 - 30 minutes, until no longer pink.
Serve with some green beans, salad, mac n' cheese, simple.

Try chicken breasts beaten thin and coated in softened spinach and rouille (soft herb cheese) rolled up and wrapped in bacon or parma ham secured with cocktail stick. Brown in pan then cook at 230degC for 20min in the oven. Serve with salad of lettuce, cucumber and baby tomatoes.
Or pork wiener schnitzel..flatten pork steaks, coat in flour, dip in beaten egg & breadcrumbs. Fry about 2-3 min per side and serve with lemon slice, hollandaise sauce and steamed asparagus.
Pork stroganoff works well too- just sub pork loin strips for steak and saute with mushrooms, herbs and creme fraiche and marsala or even martini. Serve with tagliatelli and garlic bread.
Finally! Try this..cos I haven't dared!..get a whole chicken (say 1.5Kg)..open a can of Foster's lager..insert the can inside the cavity (delicately put there AZ!) and cook for 90min at 230degC (can vertical). Serve with roast veg like carrot, sweet potatoes and parsnips.

I have the same issue and found this the other night and was thrilled.

2 boc choi - quartered
birds eye chili sliced finely - to taste
1/3 cup of soy
1tbs of honey
4 x 30cm square of tin foil
4 x 30cm square of backing paper

put tin foil and backing paper on a tray
place chicken in the middle and score a few times
put soy, honey, garlic, ginger and chili in a pan and warm till honey melts (i actually did this in the microwave).
start making a parcel with the tinfoil leave the top open so you can poor the soy/honey mix over the chicken and place boc choi on top seal the top of the parcel and bake in the pre heated 200C oven for 15min - serve over rice.
