Try this.. This is a nice vegetable lovers side dish !

Spicy lentils

2? hours | 10 min prep | SERVES 12

Ingredients

# 1 tablespoon olive oil
# 2 cups chopped onions
# 1 tablespoon grated ginger
# salt
# black pepper
# 2 tablespoons chopped garlic
# 2 teaspoons ground cumin
# 2 teaspoons curry powder
# 1 teaspoon ground coriander
# 2 1/2 cups water
# 2 cups chicken broth
# 2 cups dried red lentils
# 3 bay leaves
# 1 cup plain yogurt
# 3/4 cup tomato puree

Directions

1. Heat oil in a dutch oven over medium heat and add onions, ginger, and a dash of salt & pepper.
2. Cover and cook for 10 mins until soft.
3. Add garlic, curry powder, cumin, coriander and cook for 1 minute.
4. Add water, broth, lentils and bay leaves and bring to the boil.
5. Cover and reduce heat, simmer for 2 hrs until tender and the liquid is absorbed.
6. Remove bay leaves, add the yogurt and tomato puree and simmer 5 minutes until heated through.

Lentil soup.......1 cup plus lots of veges plus a tin of tomato soup.......SO YUM.................. and healthy !! ( a few spices to suit yr taste..)

Hi here is a quick recipe ,

Take the lentils (amt depends on you) in a pressure cooker , add a pinch of salt and double the amt of water ( to the amt of lentils ) and cook for a wistle .
Let it cool .

Pour it to a cooking vessel , add half chopped onions , half chopped tomatoes , chopped carrots (1 ) , chopped beans ( 7,8) , handful of peas . Add salt to taste . Bring it biol till carrots are soft and cooked .

Now in a small pan take 3 tbs oil , addpinch of mustard ,let it splutter seeds , one piece garlic , pinch of aesofotida , 5-6 curry leaves , after a min takeit out and pour into the lentils .

Serve hot with rice or bread :-)

Equal amounts of rice and lentils.

Double that amount for liquid...maybe chicken stock? (so if you have a cup of rice, a cup of lentils, that's 2 total, and you need 4 cups of liquid.)

Dump it all together and start it on high. When it starts to boil, turn it down to medium, then low, and cook 20 minutes.

While that is working...sautee up some onions, garlic, etc...whatever you like, really, of the aromatics (celery is good too, chopped fine)

Toss in some veggies. IF you are dealing with raw, put them in with the rice and lentils. If the veg are frozen, add them 5 minutes before the rice and lentils finish. IF you add canned or leftover, toss them in at the very last minute to warm them up.

Some veggies that work really well...shredded cabbage, baby carrots, brocolli crowns, new potatos, turnip, whatever.

When everything is done, dump it together and stir it up.

Top with parmesan at the table.

You can add meat if you like. Hillshire Farms beef sausage is great with this...shredded chicken breast too.

Which kind of lentils do you have?

The green ones are great as a salad, while the red ones collapse and are great for thickening stews and soups.

There are several types of lentils each with its own Indian name, but here goes;
I fry some sliced onions, and chicken portions in cooking oil in a deep frying pan or Wok...
I use curry powder, black pepper corn, cinnamon, salt, garlic and a small touch of nutmeg for spice...
Aniseed is often used by Indians also, but my family does not like it...

On one side, cook up some rice...

Once the rice is done, and the chicken is done, simply add lentils and water enough to just cover, and replace lid so that the food can simmer.

(I like to mix dried red lentils with dried black lentils)

Lentils cook fast so keep an eye on them....

Once lentils are done, drain excess water and add cooked rice.
Mix well.
Now you have a "mock biryani", and no one will know the difference......

Lentil Shepherd's Pie

A spicy, hearty blend of potatoes and lentils baked into a savoury casserole that's sure to satisfy.

Ingredients

?lb/225g lentils, cooked and drained
1 small onion, diced
?tsp crumbled sage
?tsp minced garlic
pinch of dried oregano
1tsp salt, plus more to taste
dash of cayenne pepper
3 large potatoes, cooked and unpeeled
?-1 cup hot soya milk
margarine to taste


Method

1. Preheat the oven to 400°F/200°C/Gas Mark 6.

2. In a large mixing bowl, mash the cooked lentils thoroughly and add the onion and seasonings. Place the lentil mixture in a lightly oiled 4pt / 2.5L casserole dish.

3. In a separate bowl, mash the potatoes and add the hot soya milk, margarine and season to taste. Beat by hand or with an electric mixer, until fluffy.

4. Spread the mashed potatoes on top of the mashed lentils and bake for 20 minutes, or until potatoes are dry on top.

Place the pie under the grill to brown the top.

Serve hot with seasonal vegetables.

I often make lentil curry. I just fry an onion with some curry paste or curry powder, chuck in a few handfulls of lentils, stir through, add some stock and a tin of tomatoes, cover and simmer for half an hour. Easy and very tasty. You can add different veg to it if you like.
