Mashed potatoes as a crust?!


Question: I was just thinking about what i was going to cook tonight and just thought of something. useing a muffin pan, make tart like pies useing mashed potatos as the crust. like a tomato paste filling with mushrooms onions peppers and squash.

but my real question is this, how would i make the mashed potatos strong enough to hold the food with out falling apart. I will be keeping the filling drier then normal and they will be normal sized.

i was thinking pre baking them for a few minutes before hand then adding the filling to them.

any suggestions?

i would say make them as usual, and probably add an egg and yes, definitely prebake for a few minutes, at least until they are (pardon the pun) crusty...

that idea sounds really good, now i'm hungry! :o)

add: oh, and make sure you butter your muffin tin!!! that will help them come out easier, without falling apart.

To make them stay together better I would also add an egg or two (depending on how much you are making)

add some egg to the mixture and it will firm when it is cooked, you will have to bake it to start with then add the filling otherwise it will go soggy! best of all use pastry- thats what t is designed for

Mashed potatoes won't form a crust- they won't adhere, and they won't crisp properly. It won't matter what you do with the filling- the mashed potatoes will fall apart as soon as you try to take them out of the tart pans. Instead, I'd suggest making a pastry dough and adding some mashed potato to it, or using dehydrated potato flakes, or even making a regular crust and putting mashed potatoes on top of the tarts; then broiling until browned.

last week i watch on tv a recipe using mashed potatos as a crust,uses 1 egg yolk and cook spinache with garlic,and filled with mushooroms and some cream.was great!
