Answers: Different and easy (where a 6 year old could cook it) meals where the protein is skinless chicken breast. Any ideals? Thanks in advance.
4 Pieces of chicken....@1.5 lbs
? cup Dijon mustard
1 tablespoon Honey
2 tablespoon Oinon chopped
1 Clove crushed garlic
In a small bowl, combine mustard, honey, garlic. Remove skin from chicken. Place chicken in a lightly greased, 9 inch, square baking dish. Spread with mustard sauce Microwave, covered on full power for 12 minutes.
The easiest chicken recipes all require just microwaving!
You could always bread it in flour or bread crumbs and fry it or bake it.
I use skinless chicken breast very often and when I dont feel like cooking, I just do this. It simple.

Buy a bottle of lemon pepper marinade (or any kind of marinade!), pour it into a gallon ziploc bag, put the chicken in. Keep in fridge for a while. (Overnight is best, but one hour works too.) Put it into a greased dish and bake at 400 for 20 to 25 minutes. Delicious! You can serve it with rice or pasta or whatever you like.
This one is good and super easy.
Mushroom Chicken
4 boneless or bone-in chicken breasts
1 can cream of mushroom soup
1-8 oz container of sour cream (regular or light)
1 cup sliced mushrooms (optional)
1 tsp garlic salt
pepper to taste
Mix together everything but the chicken in a bowl. Pour half or the sauce in a casserole dish. Add chicken breasts and top with remaining sauce. Bake at 350F for 1 hour.
Serving suggestions: Mashed potatoes with sauce as gravey or red potatoes, vegetable, and Hawaiian rolls.
Easiest recipe we use:
chicken breast (we buy frozen, boneless, skinless ones that can be cooked from frozen)
bag of chopped frozen mixed pepper strips
bag of chopped frozen onion
can of pitted black olives (optional)
seasoning of choice - we use Club House greek or red pepper spice, plus a few dashes of soy sauce, or wochesteshire sauce
put chicken in pan. Drizzle some olive oil. Cover in dry spice.
Add full bag of peppers and some onions on top. Add olives if desired. Add few dashes of sauce, a little more olive oil and spice. Put in 400F oven for ~1hr - which gives you lots of time to do other stuff.
Make rice or noodles to accompany, whichever your preference.
Serve! Sometimes we'll slice it up and mix together, others times we'll serve the chicken breast as a whole with rice on the side.
This is the easiest "recipe" in the world, but I have served it for dinner parties with artisian bread, etc and have always received rave reviews. I never give the recipe because I'd be embarassed if people knew how little effort I put in!

Ideals or ideas? My "ideals" are much different than some of my "ideas", although the two overlap from time to time. Here are some ideas for your 6 year old:
1. Chicken and american cheese rollups: on a whole grain tortilla, or flatbread, spread with lowfat mayonaise, top with cheese and thin slices of chicken or turkey, roll up and secure with toothpicks. Cut into slices and enjoy!
2. Teriyaki Chicken Thighs with rice: boneless, skinless chicken thighs (they are more flavorful than breasts), Teriyaki sauce (marinade is best) 1 can pineapple chunks, 1 green pepper, seeded and sliced into strips, 1 yellow onion, chopped, steamed rice. Cut thighs into cubes and marinate in teriyaki sauce. Saute pepper and onion in 3 T olive oil until they soften. Add chicken and saute until cooked thru. Add more sauce and pineapple. Cover and simmer for 15 minutes. Steam rice and pour mixture over the top.
3. Chicken breasts stuffed with feta cheese, artichoke hearts, parsley. Drain artichoke hearts, reserving liquid. Chop coarsely and mix with 1 4 oz package feta cheese (low fat) and 3 T chopped parsley. Make a pocket in thickest part of breast and fill with 1/4 of the mixture. Season on outside with salt and pepper and place in baking dish. Add chicken broth or white wine to reserved liquid to form one cup. Add 1 tsp dijon mustard and season with salt and pepper. Pour over top of breasts, cover and bake at 350 degrees for 1 hour. Remove cover during last 10 minutes to brown. Serve with rice or new potatos.
4. Sliced grilled chicken breasts tossed with chopped baby lettuces, fresh pears, candied walnuts, gorgonzola cheese, and a dijon vinagrette or french dressing.
5. Baked potatos filled with chopped cooked chicken breasts, shredded monterey jack cheese, green chili's (diced), butter and salt and pepper.
Make Stove Top dressing and place it in a 9 x 13 pan. Take the skinless chicken breasts and brown them on both sides. Place them on top of the dressing and cover with a can of condensed cream of chicken soup (no water added). Bake in the oven at 350 degrees for about an hour, or until chicken is done.
Easy enough for a child. Enjoy!
cut chicken breasts into cubes
add same amount of peeled potatoes cut into cubes as well (slightly bigger)
add salt, pepper, oregano, crashed garlic (to taste) lemon juice and olive oil.
cover it all with water and put in the oven uncovered, medium heat, around 45 minutes or until potatoes are tender
if water dries meanwhile, add some. before serving broil the top until golden brown (around 5 minutes)
CHILI CONCOCTION
Boil 1-1.5 lbs chicken til done. Drain. Break chicken apart with a fork or pull apart.
Heat a pot with a dash of olive oil. Add the chicken. Then stir in one can of tomatoes, one can of kidney beans
1 large onion chopped, 1 tablespoon chili powder, 1/2 teaspoon salt. Heat to boiling then turn down heat. Simmer 1 hour.
4-6 servings.
My daughter loves to make this for her friends when they come over.
Potato Chip Chicken
Heat oven to 350. Cut chicken breast into strips. Beat egg in a bowl. Place potato chips into ziploc bag and close tightly. Run rolling pin over it to crush the chips. Dip chicken in egg and then chips. Place on baking sheet and cook approximately 15 minutes, depending on thickness of chicken, until juices run clear when poked with a knife. Serve with different sauces, such as ranch dipping sauce or ketchup.
