3 large bananas

1/3 cup melted butter

Directions
1Mash bananas, add sugar and the slightly beaten egg.
2Stir in melted butter.
3Stir in dry ingredients.
4Spoon into medium size muffin pan (I use the paper muffin cups inside pan).
5Bake 20 minutes at 350F degrees - 375F degrees.

2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking soda(*)


Directions
1Preheat oven to 350 degrees.

3Add dry to wet while stirring. Mix well.
4Pour into a greased loaf pan.
5Bake 55-65 minutes. Let stand 10 minutes before removing from the pan. Cool completely.

I baked a store bought banana muffin mix, adding some fresh bananas, chocolate chips and orange zest and it was fantastic.

3 - 4 just ripe bananas mashed with1/3rd cup of melted butter, add 1 cup of sugar, and 1 beaten egg. take the seeds out of a fresh vanilla pod and mix in, 1 teaspoon of baking powder, pinch of salt, mix in and then sieve in 1 and 1/2 cups of self raising flour and mix. Throw in some chopped walnuts if you like. This is for a 1lb cake mix, but you can just split it up into muffin tins. Prob take approx 25mins at least at 200 degrees, don't open the oven for the first 10 mins else they will go flat.

Go to the grocery store and buy a bannana muffin mix. Or a banana bread mix and mix it up by the package directions. You can add some of your own mixes to it too. Like nuts golden raisen or coconut. This is quick and easy

Easy Banana Muffins
1/2 cup (or 1 stick) butter or margarine, softened
1 cup sugar
2 large eggs
2 large ripe bananas, mashed
2 cups flour (all-purpose)
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup chopped walnuts
1 teaspoon vanilla extract
Preheat oven to 400°. Beat together butter and sugar at medium speed of mixer or by hand, until light and fluffy. Add eggs, 1 at a time, beating well each time. Add bananas and beat until smooth. In a separate bowl, mix together flour, salt, baking powder and baking soda. Alternate stirring in part of the flour mixture and part of the buttermilk into the egg mixture until all is added and mixture is just moistened. Do not overmix. Batter will not look completely smooth. Stir in nuts and vanilla. Grease 12 standard size muffin tins or use paper cupcake cups. Spoon batter into muffin cups, filling 2/3 full. Bake 15-18 minutes until lightly golden. Cool muffin pan slightly before turning out the muffins. Cool muffins on a rack a bit more. Makes 12 medium size muffins. Great served warm with butter!
