fish fillets (redfish, orange roughy, catfish)
butter
Cajun seasoning


Heat an iron skillet or griddle on gas grill set on high until skillet is extremely hot. This will require 15 to 20 minutes.

Dip fish fillets in butter, sprinkle with Cajun seasoning.

When skillet is smoking hot, melt 2 to 3 Tbsp. butter in skillet; add fish fillets.

Cook quickly with grill lid down 4 to 8 minutes each side or until fish flakes easily and is slightly blackened.

Do you mean a marinade... or a bbq sauce? Do you want a tomato or oil based sauce? Light or bold flavor? and what kind of fish? you need to be a little more specific......

Go to Food Network.com. and look up Bobby Flay's recipes under the tv show "Boy Meets Grill"........

Mediterranean Marinade For Fish

10 cloves garlic smashed and peeled
3 bay leaves broken
6 sprigs rosemary bruised with back of a knife
6 sprigs thyme
4 cups red wine
1/2 cup soy sauce
1/2 cup teriyaki sauce
1/2 cup cider vinegar
3 lemons chopped
1 large white onion chopped
1 tablespoon freshly ground black pepper
1 tablespoon dried oregano

Directions
Combine all ingredients then cover and let set at room temperature several hours before using.
To marinate, put marinade and Fish in a plastic bag.
Refrigerate and turn every few hours.
Roast BBQ or grill marinated fish
