How do you make twice baked potatoes?!
1 package (3oz) cream cheese, softened
1 teaspoon minced fresh or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish
PREPARATION:
Scrub potatoes well; grease lightly with shortening and pierce with a fork two or three times. Bake in 400° oven for 1 hour or until fork tender. When cool enough to handle, split potatoes lengthwise and scoop out potato into electric mixer bowl. Add remaining ingredients, except egg, and beat well. Add egg and beat until smooth. Fill potato shells; sprinkle with additional cheese and paprika, if desired. Bake at 375° until puffed and lightly browned.

I just read the answer from cin-to-win, and it is excellent. I have only a couple of additional suggestions: 1) for me the best potato is the long Idaho potato with the thick skin. This is the same potato and skin which are used for Irish potato skins (try them sometime!); and 2) when you put the whipped or finely chopped potato back into the skin, use your imagination! You can add almost anything. Perhaps just the potato and cheese (blue cheese is great). Or lay the white potato insides aside, and use sweet potato. At your favorite supermarket, check out the different potato fillings used by the different brands of frozen potatoes.....You get the idea. Good luck.

I baked the potato and scoop it out. Then I mash it and add green onion, grated cheddar and diced ham. Then a good dollop or two of sour cream to moisten it. and salt and pepper. Put it back in the skins and add some more cheese on the top. Golly, it's been a while since I did this and it is making me hungry talking about it.
