IHOP Basic Pancakes Recipe

Nonstick Spray
1 1/4 cups all-purpose flour
1 egg
1 1/4 cups buttermilk
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt

Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.

In a blender or with a mixer, combine all of the remaining ingredients until smooth.

Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.

When the edges appear to harden, flip the pancakes. They should be light brown. Cook on the other side for same amount of time, until light brown.

Makes 8 to 10 pancakes.

*Cream of Wheat pancakes

Ingredients:

5 1/2 cups buttermilk
1/3 cup instant Cream of Wheat, dry
1 egg
1/3 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup vegetable oil
1/2 teaspoon salt

Directions:

Heat a skillet over medium heat.

In a large bowl, combine all ingredients until smooth. Pour the batter by 1/3 c. portions into a pan coated with cooking spray and cook pancakes until brown.


*Banana Pancakes with Butter Rum Sauce

1 cup flour

1-1/4 tsp baking powder

1/8 tsp ground cinnamon

1/8 tsp grated nutmeg

1 cup buttermilk

1/4 cup brown sugar

2 Tbsp butter, melted

1 large egg

1 tsp vanilla extract

3 ripe bananas, mashed

Butter Rum Sauce

1/2 cup maple syrup

1 Tbsp butter

2 Tbsp dark rum

In a mixing bowl, add the flour, baking powder, cinnamon and nutmeg. Mix well. Add the buttermilk, brown sugar, melted butter, egg and vanilla extract. Whip well until smooth. Let rest for 30 minutes. Fold in the mashed bananas.

Spray a flat pan or griddle with vegetable spray and heat. When hot, pour 3 to 4 tablespoons of the batter for each pancake. Let the pancake cook until bubbles appear on top. Turn the pancake over and cook for another minute. Repeat to cook remaining pancakes.

For the sauce: In a saucepan, combine all of the sauce ingredients and heat over low heat until the mixture simmers. Pour over the pancakes and serve at once.


*IHOP Harvest Nut & Grain Pancakes

Ingredients:

***Dry Mix:***
7 3/4 cups all purpose flour
1 1/8 cup Quaker quick oatmeal
1 1/2 cup whole wheat flour
3 1/2 cups corn meal
1 cup wheat bran
3/4 cup sugar
1 1/2 cup finely chopped pecans
5 3/4 tablespoons baking powder
2 1/2 teaspoons baking soda
2 1/3 tablespoons dry malt*
1 3/4 teaspoon salt

***Waffle/Pancake batter:***
1 3/4 cup buttermilk (use more for pancakes)
2 x-large eggs
2 teaspoons vanilla
6 tablespoons butter
1 teaspoon water

Directions:

Dry Mix:

Mix all ingredients together. Store in air tight container.

Waffle/Pancake batter:

Put buttermilk in bowl and whisk in eggs. Whisk in dry mix. Add vanilla. Melt butter and water and whisk into batter.

*dry malt can be found from home-brew stores


*Beer Pancakes

Ingredients:
2 cups pancake mix or Bisquick mix
2 tablespoons sugar
1/2 teaspoon cinnamon
1 dash of nutmeg
5 eggs, beaten
1/2 cup beer
2 tablespoons oil

Directions:

In a large bowl, stir together mix, sugar, cinnamon and dash of nutmeg. In another bowl, stir together beaten eggs, beer and oil. Add to dry ingredients, stirring just until dry ingredients are moistened.
