How do you peel a egg plant ?!
Answers: I am trying to make egg plant parmesan. But the skin some how changes the tast.and its very hard ti skin it.Is there a trick?
I think the skin is a little thick for a veggie peeler. I use a good paring knife.
What a coincidence, I just turned on Good Eats with Alton brown, and he is doing egg plants.
SO far he recomends usinga "male" egg plant. It has a round bottom where a "female" eggplant has a belly button on the bottom. Also they are not a veggie but a berry.
I'll keep watching for good ways to peel it.
Okay he says to use a veggie peeler with the serrated blade, and he also reccomends using the "Y" shaped style rather then the straight one.
He also made eggplant parmesean in under 1 minute. He didn't bake it, it was all done in a skillet. Pretty tasty looking, I'm gonna try it.
a paring knife or a carrot peeler should work .
Try dropping the eggplant in boiling water for a minute or two. Remove the eggplant from the boiling water and drop it into ice water to cool. The peel should come off easily with a knife or kitchen peeler.

use a veggie peeler or a sharp paring knife. You want the skin off to cook it!
with a good sharp veggie peeler you use on carrots.
A real good paring knife goes a long way. However I have cooked eggplant with the skin on ( deep fried ) and it wasn't bad at all.
The dropping the eggplant in boiling water, I have not tried. I do know that it works for getting the skins off tomatoes.

the skin of an eggplant is different from the skin of an onion so the boiling and cold water bath will really just adhere the skin to the flesh...a veg peel will work...cut both ends first to make it easier to handle....and a nice sharp knife...cut both ends....put cut end on cutting board and just shave down toward the board...like a melon...either way...i agree...the skin can be a bit bitter and change the flavor of the dish...peeling doesn't take that long and is worth the time for the final product
Drop it into boiling water for 2 mins. Then put it into a bowl of iced water. Dry it off then peel. Good luck friend!

boil it and put the eggplant in to soften the skin but actually you dont really need to peel the skin off
