Rotisserie chicken is a wonderful and easy food to add to any of your mexican or Italian dishes. It's usually got alot of sodium in it, however, so watch the salt content of the rest of your ingrediants. Here's one of my favorite recipes:

1 rotisserie chicken, skin removed and meat chopped
1 can Pillsbury large Crescent Rolls
1 8 oz package softened light cream cheese
3 T chopped green onion
18 asparagas stalks, ends trimmed, cooked crisp tender

Mix cream cheese with green onion and set aside. Open crescent rolls and separate triangles. Spread each triangle with 1/6 of the cream cheese mixture and top with 3 asparagas stalks and some of the chicken. Wrap into bundles, leaving the ends of the asparagas showing. Place on greased baking dish. Bake at 350 degrees until puffed and golden. Serve with chopped salad and fresh fruit.

use the chicken to make mexican chicken,,,, salsa , chicken cut up a onion and a green pepper,,, put in pan with a taco season packet,,,,,

serve over rice or with tortilla

you will need cheese and sour cream

i don't know if this is mexican or italian but my mom used to make chicken divan with rotisserie chicken from the store. here is a recipe:

Quesadillas are super simple!

1. Shred chicken.
2. Combine chicken, shredded monterey jack cheese, peppers, onions, whatever else you want, and sandwich it between 2 tortillas.
3. Heat the quesadilla in a skillet until the cheese is nice and melty. Flip it over to brown the other side.

Let it sit for a few minutes before you cut it! Pizza cutters work best.

serve with sour cream, guacamole, salsa.

Sometimes I make chicken enchiladas. Go to Foodnetwork.com and go to Sandra Lee. She has a lot of recipes for rotisserie chicken and fast too!

Fiesta Chicken Bake

5 cooked boneless skinless chicken breasts(cubed or shredded)
7 ounces tomato sauce
7 ounces jalapeno salsa
4 ounces green chilies
1 large onion, chopped
2 cups Monterrey jack and cheddar cheese blend(shredded)
8 ounces sour cream
salt & pepper
13 ounces tortilla chips

Preheat the oven to 350 degrees. Mix chicken with all ingredients, except the tortilla chips.
Generously grease a 9x13-inch baking dish.
Crumble the bag of chips. Stir 3/4 of the chips into the chicken mixture. Spread mixture into baking dish, and sprinkle remaining chips over top. Bake for 40 minutes.


Chicken Pasta Primavera

8 oz. linguine (preferably whole wheat)
2 Tbsp. extra virgin olive oil
1 small onion, diced finely
2 cloves garlic, minced
1 red pepper, seeded and diced
8 oz. mushrooms, cleaned and sliced
1 cup diced zucchini
3 ripe tomatoes, seeded and chopped (whatever variety is in season or looks best at the market)
28 oz. crushed tomatoes
1/2 cup fresh parsley, chopped finely
1 cup rotisserie chicken, shredded
kosher salt and pepper to taste
grated Parmesan cheese (optional)
Prepare linguine according to package directions. Drain and set aside.

Heat olive oil in a large skillet or saute pan over medium heat. Add onion and garlic, stirring frequently to prevent the garlic from burning. Cook 2-3 minutes. Add the red pepper, mushrooms and zucchini. Cook about 5 minutes until vegetables are tender. Add diced tomatoes and crushed tomatoes. Season with salt and pepper to taste. Bring to a boil, then reduce heat to medium low and allow sauce to simmer 10 minutes or so until the vegetables become soft and all the flavors meld. Add parsley and rotisserie chicken. Cook another 5 minutes until heated through. Taste and season again, if necessary. Serve over hot linguine and topped with grated Parmesan cheese, if desired.
