Need good recipe for scalloped and au gratin potatoes?!
6 medium-ish sized potatoes (peeled & sliced thin)
grated cheese for sprinkling
1-2 TBSP butter
chopped parsley as garnish
[Cream mixture]:
2 cloves garlic, minced
1 TBSP chopped green onions
1 TBSP chopped parsley
1/2 C grated parmesan cheese
1/2 C mixture of grated mozarella,romano, gruyer and asiago cheese
salt
pepper
1-1/2 C heavy cream
Process:
- Mix the Cream Mixture
- toss a quarter of the mixture with the potatoes
- butter the baking dish
- arrange potatoes in layers, sprinkling each layer with cheese.
- pour on the rest of the cream mixture.
- drizzle the top with cheese and pat on some butter
- finish off with sprinkles of chopped parsley
- cover with foil, bake it at 350 degrees F for 1 hour.
- after that, take off foil and place dish on broil for an additional 15 minutes or until golden and gooey.
voila!! potato au gratin! =)

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.
1/3 cup unsalted butter, softened
1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika
Preheat the oven to 350 degrees F.
Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.
4 cups thinly sliced potatoes, about 6 to 8 medium potatoes
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper

2 cups scalded milk
1/2 cup shredded Cheddar cheese
In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted.

Gently par cook your potatoes in the cream on the stove with fresh thyme and rosemary. Rub garlic around the inside of your oven dish. Strain the potatoes and throw away the herbs. Place potatoes in oven dish and cover with cream and season with salt and pepper. Cover with grated cheese and bake in a medium oven until potatoes are fully cooked and cheese is golden. Don't cook at too high a temperature or the cream will boil and separate.
Use a basic recipe for scalloped potatoes, but try adding ranch dressing , some cheddar cheese, bacon bits, it's like a stuffed potato!
