Doesn't get easier than the crockpot. I love that I can throw it all in before I leave for work and I come home, maybe have to cook some rice or something on the side, but for the most part, you can cook an entire meal as one dish that cooks while you work! I can do a ham, lasagna, soups, you name it. Below are some of my faves.

Some of the things I've done in mine:

Teriyaki

2 lbs meat (steak, pork, chicken - your preference)
1 onion
1 pepper
1 cup soy sauce
2 tablespoons sugar
2 tablespoon vegetable oil
2 teaspoons groung ginger
2 tablespoons minced garlic

Cut meat and veggies into bitesize pieces and layer in crockpot, meat on bottom. Whisk all over ingredients in separate bowl and poer over in crockpot. Cook on low for 4 - 6 hours. Serve over rice.

Another chicken recipe:

3 - 4 chicken breasts (can be frozen)
1 can Rotel or salsa about 15 oz (drained if Rotel)
1 can black beans
1 can corn
1/2 packet of taco seasoning
8 oz. cream cheese

Place all in crockpot, cook on low for 5 - 7 hours, until no longer pink. I put mine on in the morning when I leave for work about 9, done by 5.
30 - 45 minutes before serving, put cream cheese on top, turn crockpot on high. Let cream cheese melt, then stir right before serving.

Non Crockpot

Chicken breats (3 - 4)
1 egg beaten, with 1 teaspoon garlic powder)
1 sleeve Ritz crackers, crushed
butter

Preheat oven to 350. Dip chicken in egg, then roll in Rtiz. Place in baking dish and dot on and around chicken with butter. Cook for 20 - 30 minutes, until no longer pink.
Serve with some green beans, salad, mac n' cheese, simple.

Most of these classic dishes are awesome once you put your own twist on them. For example, men love classic flavors and foods, but by adding some small ingredients like onions and garlic to the chicken and rice gives them a different experience than their moms was.

Any type of twist you can put on a classic is not only creative, but is a guaranteed hit! He will see that you can cook from the heart, and food is the best way to the man's heart!

A great steak, baked potato and a green salad with blue cheese- works every time for my guy.

If you're feeling ambitious, try chicken fajitas, rice and beans- its still very simple and really tasty!

You could always do an easy Chicken Alfredo dish.
I used 1 box of Garden Rotini, 1 lg. can of pre-cooked chicken, 1 can of Alredo sauce and sometimes variate the spices. As a side, you could do a basic salad and fresh rolls.

Lil Cheddar Meat Loaves
From Taste of Home

INGREDIENTS
1 egg
3/4 cup milk
1 cup (4 ounces) shredded cheddar cheese
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 pound lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1-1/2 teaspoons prepared mustard

SERVINGS 8

DIRECTIONS
In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13-in. x 9-in. x 2-in. baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves.

Bake, uncovered, at 350° for 45 minutes or until the meat is no longer pink and a meat thermometer reads 160°.


Penne with Vodka Sauce

Recipe Summary

1 quart Simple Tomato Sauce, recipe follows, or store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound penne

Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.


Simple Tomato Sauce:
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper
4 tablespoons unsalted butter, optional

In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor. Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.

quiches are easy to make and looks a lot classier if you filo puff pastry dough. Coupled with a spinach salad and some wine.

or, if you make anything fried, used panko crumbs instead of flour.

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.


Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
? cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
? cup margarine (I use I Can’t Believe It’s Not Butter Light)
? cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.


Cajun Fried Chicken or Pork

4-5 boneless chicken breasts, boneless pork chops
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
? cup water
1 – 1 ? cups oil, for frying

Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.

Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.

Heat vegetable oil in large skillet on medium high heat.

Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.

Serving Suggestions:
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.
