There's this phenomenon that seems to show that a farther a delicacy gets from it's home town, the more fancy people think it's supposed to be. I always see this question about crab cakes and see all kinds of fancy answers. Truth be told, if you're like us here in Maryland-- crab and crab cake capitol, you'd hardly think of anything but a side of fries, cole slaw and a slice of Eastern Shore tomato with them. Oh-- and a cold beer!

can never go wrong with broccoli and cheese

you can wilp up some stir fry, and you knoy that would be good with a little bit of chicken in it.

This may sound strange, but my mom always made it, and it's REALLY good! In fact, I usually make it with crab cakes, since I already have celery on hand...

STEAMED CELERY

Cut 4-5 stalks of celery into 1-2" pieces. Either steam them (I put in microwave with about 1/4" water, cover with wax paper and cook about 3-4 min).... Just put alot of real butter and some salt on top. You can sprinkle with some bread crumbs, too, if you want.....

SWISS GREEN BEANS
2 pkgs. frozen French beans
1 c. sour cream
1 C. Swiss cheese, shredded
1 tsp. seasoned salt
1/4 tsp. pepper
1/2 c. butter
1/2 c. croutons
Thaw and drain beans. Mix sour cream, cheese, salt & pepper. In 1 qt. dish, layer 1/2 of the beans; 1/2 of the cheese mixture; repeat. Melt butter and add croutons; stir to coat. Put on top of beans. Bake uncovered at 300 for 30 min. Serves 6-8

corn salad.

2 cans white whole kernel corn (drained)
1can yellow corn (drained)
1 small onion chopped
1 small green bell pepper (seeded and chopped)
1 tomato chopped

mix together and add 1/2 cup mayo. stir together salt and pepper to taste. refrigerate (this is best when it can sit overnight or all day in the refrigerator) enjoy

coleslaw! or tomato salad with cucumbers, tomatoes and onion and garlic with a vinagrette on it.

Super Broccoli Casserole

2 boxes or 1 bag frozen, chopped broccoli, cooked and drained
2 eggs beaten
1 sml onion, minced
1 can cream of mushroom soup
? cup mayonnaise
1 cup grated cheddar, jack, or mozzarella cheese
1 cup cracker crumbs
? cup butter

Combine first 6 ingredients, add to buttered 9x11 casserole dish. Sprinkle with cracker crumbs and dot with butter. Bake at 350F for 1 hour.
