Appetizer: Antipasti platter with pepperoni, salami, mozzarella cheese, olives, marinated artichokes and mushrooms, etc
1st Course: Pasta e Fagoili Soup and Caesar Salad
2nd Course: Lasagna
Dessert: Tiramisu
Aperatif: Limoncello or Persecco
Pasta e Fagioli:
4 tablespoons olive oil
2 garlic cloves, minced
1 16-ounce can Italian plum tomatoes, drained, chopped
2 tablespoons minced fresh parsley
1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried oregano, crumbled
1 15-ounce can cannellini beans (white kidney beans), rinsed, drained
Salt and pepper
8 ounces elbow macaroni, freshly cooked
Grated Parmesan
Heat 3 tablespoons oil in heavy large skillet over medium heat. Add garlic and sauté until brown, about 2 minutes. Stir in tomatoes and cook 5 minutes. Add parsley, basil and oregano and simmer until tomatoes soften, stirring occasionally and breaking up tomatoes with back of spoon, about 15 minutes. Add beans and cook until heated through, about 5 minutes. Season with salt and pepper. Place pasta in bowl. Toss with remaining 1 tablespoon oil. Pour sauce over and toss thoroughly. Serve, passing Parmesan separately.

I wouldn't cook italian...you're setting yourself up for a pretty big compare if they live in Italy....
Maybe do greek! Souvlaki, Greek Salad, Rice, Potatoes and baklava!
Spaghetti ala Bolognese
INGREDIENTS
1 pound lean ground beef
1/2 pound sausage
1/2 medium onion, chopped
1 cup milk
3/4 cup Holland House? Red Cooking Wine
3 beef bouillon cubes
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 pound spaghetti, cooked
DIRECTIONS
Chop ground beef and sausage until well minced. Cook onion, beef and sausage in a larger skillet over medium heat until pink is gone, about 6 minutes.
Add milk and simmer until almost evaporated, about 4 minutes.
Add red cooking wine and beef bouillon. Simmer about 4 minutes.
Add canned tomatoes and tomato paste. Simmer about 15-20 minutes until sauce is thick. Serve with cooked spaghetti.
Blueberry or Cherry Dessert
INGREDIENTS
1/2 cup butter
2 cups white sugar
36 graham crackers, crushed
4 eggs
2 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla extract
2 (21 ounce) cans blueberry pie filling
1 (16 ounce) package frozen whipped topping, thawed
DIRECTIONS
Melt the butter or margarine, and add 1 cup sugar and the graham crackers. Press this mixture into a 9x13 pan.
Beat the eggs. Gradually beat cream cheese, sugar, and vanilla into the eggs.
Pour egg and cream cheese mixture over the graham cracker crust. Bake at 325 degrees F (165 degrees C) for 15-20 minutes. Cool.
Pour blueberry or cherry pie filling over the top of the baked dessert. Spread nondairy whipped topping on top of fruit. Refrigerate until ready to serve.

5. Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.

8. Frozen dinners are always a good choice. Our favorites are Stouffer's, Marie Calendar's, Michael Angelo's, Boston Market's. Just add a side dish, salad, or fruit salad. Desserts can be bought in the bakery section of your grocery store.

1 (8 oz.) tub Cool Whip
1 (8 oz.) bar of cream cheese
1/2 c. sugar
1 tsp. vanilla
1 pt. fresh strawberries
First cream the softened cream cheese, gradually add in sugar. Add vanilla and whip until fluffy. Fold in Cool Whip. Pour into crust. Garnish with fresh strawberries, blueberries, cherries. Refrigerate for 1 hour, until firm.

1 lg. carton Cool Whip
