What can I cook for dinner tomorrow nite?!
Answers: My daughters live in a unit and are coming to my place for dinner, I want something nice, but not too time consuming as I finish work at 6.00pm. There will be 5 of us. Would love some suggestions, I'm a very easy cook these days.
One of the best meals is the 500 degree chicken. You clean a 3 to 5 pound bird, rub it inside and out with salt. Cut a lemon in half. Put one half of the lemon inside the bird. Sprinkle olive oil over the bird and then squeeze the other half of the lemon over the bird. Season the bird with pepper, poultry seasoning or anything you want.
Place the chicken in a shallow roasting pan and make a deep cut where the thighs meet the body. This is to make sure that the meat near the joint gets thoroughly cooked.
Place chicken in oven at 500 degrees for 20 minutes. Reduce heat to 400 degrees and cook another 40 to 45 minutes. Your chicken with be juicy and have such a good flavor. For 5 people, I think two chickens should do it. You can make a salad ahead of time. And have rice with vegetables. Make your rice, add whatever fresh cooked or frozen vegs you like and about three tablespoons of butter or a good margarine, salt to taste. Very simple but goes well with the chicken.

Make your own bruschetta and have Fettucine Carbonara for main, otherwise you can have garlic bread with the carbonara instead of having bruschetta :)
i cannot suggest something specific, but some things you could consider first. what type of food do your girls love? :) you can start from there to be able to get a more desirable answer :) you don't wanna serve your girls with something they wouldn't like right? good luck!
I would make stuffed peppers, You can get the dish ready the night before and have someone put in oven or on a timer for about one hour before you are ready to eat. Any leftovers can go home with the girls or be frozen. Green peppers are very healthy.
I always make a nice curry for people when they come over, but the thing is a use a sauce from the supermarket fridge cases called the curry makers, and I tell you the nicest curry Ive ever had and so simple to make.

SWEET 'N SOUR CHICKEN DINNER
6 med. carrots, cut in chunks
1/2 c. chopped green pepper
1/2 c. chopped onion
3 chicken breasts
1/2 tsp. salt
10 oz. jar sweet & sour sauce
15 1/4 oz. can pineapple chunks
3 tbsp. cornstarch
3 tbsp. cold water
Cooked rice
Use crock pot. Place carrots, green pepper and onion on bottom. Top with chicken. Sprinkle salt. Pour sweet and sour sauce and pineapple chunks over chicken. Cook: low setting - 7 to 8 hours; high setting - 3 1/2 to 4 hours. Remove chicken and keep warm. Blend cornstarch and water and stir into juices in crock pot, cooking until it thickens. Season to taste with salt and pepper. Serve over rice.

FRIED RICE
4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 tablespoons dried mushrooms
2 dried whole eggs, rehydrated
1 tablespoon soy sauce
shredded canned ham, pork or chopped shrimp (optional)
Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions and mushrooms and meat, if using. Cook for several minutes. Combine rehydrated eggs with soy sauce and stir into pan. Cook until eggs set
