Here's a Challenge- I need an idea for a vegetarian AND gluten free main course?!
I'm a vegetarian and my boyfriend has celiac disease, so cooking for the two of us can be a bit of a challenge sometimes :D Thanks for any help.
Answers: I'm making a baked caesar salad for an appetizer, and a broccoli and cheese stuffed baked potato as a side. I'm looking for a main dish that is fairly quick/easy, and is vegetarian and gluten free already, or at least can be adapted to it pretty easily (we have gluten free pasta, bagels, pizza crusts, etc. here so I can probably find a way to make it work if I have to).

Falafel! No gluten and served with tahini and hummos over a bed of greens with some greek dressing makes a great entree. enjoy!
The shy is the limit,girl. Any vegetarian recipe as long as it has no flour or any wheat protein base as celiacs are intolerant to it.
One thing I find interesting though, how do you bake caesar salad ? Just curious, Cheers.
EGGPLANT SUPREME
1 large eggplant, peeled
4 stalks celery, diced
1 large onion, diced
1/4 c. butter
1 tsp. Worchestershire sauce
dash hot sauce
1-1/2 c. grated cheddar cheese
1 c. whole black olives
Cut eggplant into chungs and steam in a bit of water until very tender, about 12 min. Meanwhile, saute celery & onion in butter until tender. Add cooked, drained & mashed eggplant. Add remaining ingredients. Put into greased baking dish. Bake at 375 for 30 min.....serves 6
Cook a spaghetti squash. Make a sauce with some tomatoes, garlic, onion and veges you like. Mix it with the squash. Or add diced tomatoes, garlic, veges, with the squash strands and heat through.
