Tofu. What did I do wrong?!

Question: I was making some Hot and Sour soup the other day. I needed to put "matchsticks" of Tofu in it. I bought a well known good quality brand, followed the instructions, ie, "remove cake, drain it well and pat it dry with kitchen towel." I did this but when I tried to slice it (with a VERY sharp knife) and then cut the slices into "matchsticks", it broke up very easily. Did I do something wrong or is this normal for Tofu?

Very normal- tofu is very weak and difficult to cut right.
I recommend cutting into cubes instead.

If you are not lactose intolerant, paneer (Indian cotage cgeese) is an excellent choice too. It is easier to cut and shape but very tender too.

its normal, tofu is very very weak. it is extremely difficult to eat with chopsticks because it breaks apart so easily.

it's incredibly usual.
Try a few other brands and PLEASE don't ever try eating silken tofu! I hate the stuff and place a warning on all others who wish to eat it!

I wonder if they meant larger matchsticks and you happened to cut it too small? Tofu can be hard to work with sometimes if its not pressed or drained really well. But it happens to the best of us. Its still edible right!
