I need a good homemade receipe for caramel iceing.?!

1/2 cup packed brown sugar
1/3 cup half-and-half cream
1/4 cup butter, cubed
Dash salt
1 cup confectioners' sugar

* 3 tablespoons butter
* dash of salt
* 3/4 cup cream
* 1 teaspoon vanilla

In large saucepan, combine ingredients and mix well to blend. Bring to a boil; cover and cook 3 minutes. Uncover and cook to 238° on candy thermometer or until soft ball forms when dropped in cold water. Cool for 3 minutes. Beat until thick and spreadable. It should begin to lose its glossiness.

Caramel Frosting

2 tablespoons butter
3 tablespoons milk
1/2 cup packed brown sugar
1 cup confectioners' sugar (powdered)
1/2 teaspoon vanilla extract

In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.

Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

NEVER FAIL CARAMEL ICING

5 tbsp. butter
1 c. brown sugar
1/2 c. milk

Cook 3 minutes. Let cool and add:

1 tsp. vanilla
1 c. powdered sugar

Beat until right consistency and spread.
