How do you freeze enchiladas?!


Question: My neighbor makes great enchiladas so I need to know if I provide the ingredients for her to make 48, what is the best way to save them for later in batches of six. I will have to transport them to another location in just over an hour.

I'd portion them out first - in batches of six did you say?

Chill first in the fridge, this firms up the cheese (providing you put some on top or inside) - portion out, and wrap well. I usually use a couple of layers of Saran Wrap around each portion.

Do remember to label and date your packages.

Chicken enchiladas are yummy. Have you ever tried them smothered in mole sauce rather than ranchero. Taste Bud Heaven!!!!

Put them in a freezer?

make them but dont cook them. Put them in the freezier with tin foil over them.
