What am I doing wrong to my Thai rice noodles?!
Answers: So, I've been teaching myself Thai food lately, and all is going well. But, I have one problem I can't figure out. When making noodle dishes like Pad Thai or Drunken Noodles I always mess them up. I make sure to undercook them a bit before frying and adding sauce, but I still run into problems. Either they come out gooey, or I mutilate the noodles trying to distribute the sauce evenly. It's really the fry/sauce step I am stumbling on. What could I be doing wrong?
I don't think it is your sauce. You need to soak the noodles first in water for about 20 min. Strain, set aside and when ready, add to your sauce and stir fry. Then they won't be gooey.
