1 teaspoon olive oil.

make a hole in the middle of your flour, place the eggs, oil and salt in the center, mix weell and knead for 10 minutes, add more flour if it is sticky. flatten with a rolling pin then slice with a knife if you don't have a pasta machine.

Homemade Pasta

2-1/3 cups flour
1 tsp. dried basi or sage, crushed
2 eggs
1/3 cup water
1 tsp cooking oil or olive oil

In large bowl mix together 2 cups flour, basi or sage, and 1/2 tsp. salt. Make a well in the center of flour mixture. In small bowl beat eggs;add water and oil. Add egg mixture to flour mixture;stir ti combine.
Sprinkle the other 1/3 cup flour on a clen kneading surface.Turn dough out onto kneading surface and knead until dough is smooth and elastic(8-10 min total). Cover and let rest for 10 minutes. Divide dough into 4 equal portions. on a lightly floured surface, roll each portion into a 12" square. let stand uncovered for 20 minutes. Cut as desired or use pasta machine.
HINT: For linguini, fettuccine, or noodles, roll up dough loosely. cut into 1/8" wide strips for liguini and 1/4" wide for fettuccine and noodles. Separate the strips and cut into 12" lengths.
For lasagna noodles, use a sharp knife and cut dough into 2-1/2" wide strips.

To Cook: bring broth or water to boil. Add 1 tsp. salt and 1 tbls olive oil to water to prevent it from sticking. Add pasta a little at a time so the water/broth does no stop boiling. turn down heat slightly.Boil uncovered until done.
