Uses of Milk Cream?!


Question: Stumbled upon a packet of milk cream! Wonder how best it can be used in making those south/north Indian dishes better. Sabzi for Chappaatis, or just pour it over the Saambar, Aviyal etc? Or just add some sugar to that milk cream, with badam, elaichi, chocolate, milk masala etc, and try to make out something?

You're on the right track -- any of those choices --except pouring it over Saambar, or even Aviyal, for that matter ! ( It would be a sacrilege to mess with these two by adding milk cream :-) )

Try making Malai Kofta -- recipes galore, google it -- where you can drizzle the cream on the gravy, as much or as little as you like ! -- and mop it up with chappati or naan !!

Try makng Malai KULFI -- yummm...if you have time...

Or try making Thandai -- chilled milk, milk cream with Elaichi, ground badam and saffron and more...Here's THREE choices --

Thandai Recipe #1
15 almonds
2 tsp anise
8 cardamom pods
12 tsp sugar
1 tsp peppercorns
2 tsp cumin
1 ? cup water
1 ? cup milk
Grind all spices, and also grind almonds (separate). Mix together until well combined in a small mixing bowl. Stir in water and milk. Strain through cheesecloth to remove all pieces of spices. Serve cold over ice.

Thandai Recipe #2
10 almonds, soaked in water
6 peppercorns
4 cardamom pods
2 tsp fennel seeds
1/2 cup sweet condensed milk
1 ? quarts milk
1/4 cup milk cream
pinch saffron
Grind spices and almonds to a fine paste, and stir together with both milks, cream, until well blended. Strain out the spices with cheesecloth and serve over ice. Place few strands saffron on each serving.

Thandai Recipe #3
1 cup milk
1/4 cup milk cream
1 ? quarts water
1 ? cups sugar
1/2 tbs anise
1 tbs ground almonds
2 tsp peppercorns
1/2 tsp ground cardamom
1 tbs dry watermelon seeds
1/2 tbs poppy seeds
1/4 cup fresh rose petals
Soak dry whole spices in 2 cups of the water for at least 2 hours. Grind to make a smooth paste. Add remaining water and stir well. Strain out the spices, and then add sugar and milk with the cream. Serve cold over ice.

Dessert - Mishti Dohi - an Indian Style Cheesecake


1/2 (14 fluid ounce) can sweetened condensed milk
1 cup of milk cream
1 cup of full fat yogurt
1 cup graham cracker crumbs
3 drops vanilla essence

Mix condensed milk, milk cream and yoghurt with an egg whisk.
Add the vanilla essence.
Transfer it into your glass serving bowl.
Bake it in the oven at 350 degree F for 20 minutes.
Let it cool down to room temperature.
Cover with cling wrap and refrigerate for 4-5 hours.
Serve with graham crackers crumbs

You have some nice answers already however, you cannot go wrong do what ever you like!

Why not - it applies in almost all of the sweets, for the rich and creamy taste.

Try it in by adding as toppings on lassi / kheer / gulab jamn / shaljam ka halwa; gajar ka halwa .............. but be limited it will just add calories to your diet.

Note: This is not know as Milk Cream; i believe it is Dairy Cream; because now milk can also be obtain from Soya; this is more nutritious from health point of view.

It is used in some noth indian curries and dal makhani
Best for sweet dishes you can make thich without using lot of milk
It is also good for gajar ka halva no need for lot of milk just add little cream and it gives you Excellent taste

You can use it on everything which will not create acidity after eating that stuff. Milk cream is really very good for health.
