Anyone have a super-quick chicken recipe?!
Answers: Okay, so I need to make dinner for myself. But all I have is chicken and your every day type pantry ingredients/spices...anybody have any ideas?
The secret to good super easy chicken is to make it really thin so you can saute is very quckly. If you have a breast cut it open like a book, and pound it thin. Season with salt and pepper and saute is for 2-3 minutes per side. Then remove it and in the same pan make a sauce. Use canned tomatos (marinara, diced tomato, tomato sauce, tomato paste, adding oregano, fennel seed, garlic, chili flakes whatever), or a creamed soup undiluted (mushroom, celery, broccoli adding a bit of wine, lemon juice, thyme, pepper, etc) when warm return the chicken untl heated, maybe add some cheese, and serve.
Yup, go to the deli buy a roasted chicken. Okay, that's not what you're looking for? How about roasting the chicken on the grill and serving w/ BBQ sauce. Or cut it up and stir fry.
Chicken One-Two-Three
sautee chicken in a little evoo and butter
add some chopped onion and mushrooms if you have them if not just omit the mushrooms
let simmer about 15 min
add 1 c. BEEF broth and
1/2 c. red wine
simmer about 15 min.
make a little thickener by 1T cornstarch and 1/4 c. beef broth and add to chicken stir to thicken sauce
serve over rice or egg noodles
what you need

chicken breast
bread crumbs
parm cheese
melt the butter to a liquid. Mix the cheese and bread crumbs 50/50. Dip chicken in the butter then into the bread crumbs/cheese. Cook at 350 for about 30-40 minutes.
It will melt in your mouth
put italian dressing in a plastic bag and coat the chicken...bake in the oven at 350 for about 45-60 minutes...depending on the type of chicken [legs, breasts, etc].
brown chicken in frying pan then simmer in spaghetti sauce. Serve over rice or pasta
Marinade a couple of pieces in whatever salad dressing you have in the refrigerator, for at least an hour. Then, bake it at 375 in a dish, for about 30-45 min (depending on what the piece is); turn it over a few times and rebaste with the salad dressing ...I also sprinkle with a few extra herbs & some Creole seasoning, since I like things a little spicier..... (oil based are best, but French or Russian are fine too)......
Lets see.... If you have italion dressing you can maranated for like 15 minutes and broil it. If you have dijon mustard garlic lemon and soy and olive oil you can use that to marinate, You can just put some seasonings on it and bake it at 400 for 20 minutes. You can cut it up and stir fry it in a pan with a little oil and serve it with rice. you can pound it thin and bread it with bread crumbs and parm and salt and pepper dip it in egg and fry it up .
This is one of my fave comfort foods.
Grill or bake chicken (I leave it plain for this, you can add spices, though)
Make a few servings of rice (depending how much you'd like) If you have a can of corn add it to the rice.
Take out a can of condensed cream of mushroom soup (or cream of celery, if you like) add a tiny bit of milk and stir until the lumps are gone. Not enough to be soupy, though.
Mix into the rice and corn while it's still hot, if needed put it on low for a little bit until its all warmed.
Serve over chicken! (or you can cut up the chicken and mix it all together)
